Bacalhau à Gomes de Sá (Portuguese Salt Cod Casserole)
Why this recipe works
- Classic layered method: Cooking the cod, potatoes and onions separately before baking keeps each element distinct while allowing the flavours to settle together in the oven.
- Aromatic onion oil: Slowly softened onions, garlic and bay leaves season the olive oil, which then carries flavour through the potatoes and cod.
- Substantial but balanced: Flaky salt cod, tender potatoes, eggs and olives make the dish filling, while parsley and olive oil keep the finish fresh and savoury.

Authenticity notes
- Portuguese home-style dish: Bacalhau à Gomes de Sá is a recognisable Portuguese salt cod preparation built around simple layers of cod, potatoes, onion and olive oil rather than a creamy sauce.
- Served from the dish: It is typically brought to the table as a generous baked main, with eggs, olives and parsley added for colour, richness and contrast.
Ingredient notes
- Choose waxy potatoes: Yukon Gold or new potatoes hold their shape well after boiling and baking, giving neat slices rather than a mash-like texture.
- Check the cod before seasoning: Salt cod can vary widely in saltiness, so taste the flaked fish and the finished casserole before adding extra sea salt.
- Use good olive oil: Extra virgin olive oil is central to the flavour of the dish, so a clean, fruity oil makes a noticeable difference.
Common mistakes
- Boiling the cod too hard: Keep the cod at a gentle simmer; vigorous boiling can break the fish into small shreds and make it taste dry.
- Over-soft potatoes: Boil the potatoes only until just tender, as they continue cooking in the oven and need enough structure for layering.
- Seasoning too early: Avoid adding salt before the dish is baked, because the cod, olives and evaporation in the oven can intensify the seasoning.
Make-ahead tips
- Prepare the components: The cod can be cooked and flaked, the eggs boiled and the onions softened ahead of assembly, then chilled separately until needed.
- Reheat gently: Reheat leftovers covered in a 180°C (355°F) oven until piping hot, adding a small drizzle of olive oil if the surface looks dry.
- Best served freshly baked: The dish keeps for a short time, but the potatoes and cod have the best texture when baked and served the same day.

Instructions
- Preheat the oven to 200°C (390°F). Put the salted cod in a large pot, cover with cold water, and bring just to a gentle simmer. Cook for 8–10 minutes until the fish flakes easily, then lift out with a slotted spoon.
- When cool enough to handle, flake the cod into large pieces, discarding any bones. Taste a small piece; if it is still very salty, briefly rinse the flakes under cold water and drain well. Set aside.
- Peel the potatoes and cut into thick slices. Cook in a large pot of boiling water for 10–12 minutes until just tender, then drain. Spread on a tray or plate to steam-dry for a few minutes.
- Meanwhile, put the eggs in a saucepan, cover with cold water, and bring to the boil. Simmer for 10 minutes, then cool under cold running water and peel. Slice the eggs.
- Slice the onion and thinly slice the garlic. Warm the olive oil in a saucepan over a low heat, add the onion, garlic and bay leaves, and cook for 12–15 minutes until soft and sweet but not browned. Stir in the black pepper.
- Lightly oil a baking dish with a little of the onion oil. Layer half the potatoes, then half the cod, then half the onion mixture; repeat the layers. Tuck the sliced eggs and olives over the top, then spoon over the remaining oil from the pan.
- Bake for 20–25 minutes until piping hot and lightly golden at the edges. Taste and season with fine sea salt only if needed. Finish with chopped parsley and serve hot.
Recipe notes
Tips
- Keep the cod at a gentle simmer rather than a rolling boil so it stays in large flakes.
- If you are unsure about salt levels, hold back the fine sea salt until after baking and adjust at the table.
- For vulnerable groups, ensure the eggs are fully hard-boiled and the casserole is baked until piping hot throughout.
Substitutions
- Replace Fresh parsley with fresh flat-leaf parsley for a more robust herbal flavour.
- Replace Black pitted olives with green pitted olives for a fruitier, less bitter finish.
- Replace Yukon Gold potato with new potatoes for a firmer, waxier texture.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a covered container. Reheat in a 180°C (355°F) oven for 15–20 minutes until piping hot; add a small drizzle of extra virgin olive oil after reheating if it looks dry.
