Bitoque (Portuguese Steak with Fried Egg)
Why this recipe works
- Simple pan sauce with depth: Garlic, butter, steak juices and white wine create a glossy sauce without needing a long simmer.
- Balanced textures: Tender steak, a runny or set fried egg, crisp chips and fresh lettuce give the plate contrast in every bite.
- Hearty but balanced: The richness of the steak, egg and chips is offset by lemon-dressed salad, keeping the dish satisfying rather than heavy.

Timing notes
- Rest the steak briefly: Letting the steak sit after frying helps the juices settle before the sauce and egg are added.
- Serve as soon as assembled: Bitoque is best eaten straight away while the egg is hot, the chips are crisp and the sauce is glossy.
Ingredient notes
- Choose a quick-cooking steak: Sirloin works well because it cooks quickly in a hot pan while staying tender when sliced across the grain.
- Use the lemon to balance the plate: A bright salad dressing helps cut through the butter, egg yolk and fried potatoes.
- Dry the chips before frying: Steam-drying the par-cooked potatoes helps them brown more evenly in the pan.
Common mistakes
- Do not crowd the chips: Fry them in a single layer or in batches so they brown rather than steam.
- Watch the garlic carefully: Garlic can turn bitter quickly in butter, so keep it moving and add the wine once it smells fragrant.
- Avoid overcooking the steak: The steak continues to warm slightly as it rests, so remove it from the pan just before it reaches your preferred doneness.
Authenticity notes
- Portuguese home-style plate: Bitoque is known for its straightforward composition: steak, fried egg, chips and a savoury pan sauce.
- Chips and salad are part of the balance: The chips make the dish hearty, while a simple lettuce salad adds freshness alongside the rich sauce.

Ingredients
Instructions
- Peel the potatoes and cut into chips about 1 cm thick. Rinse well, then simmer in salted water for 5 minutes to par-cook. Drain in a colander and leave to steam-dry for 5 minutes.
- Heat 70 ml of the sunflower oil in a large frying pan over medium-high heat. Fry the chips in a single layer, turning occasionally, for 12 to 15 minutes until golden and tender; work in batches if needed. Season with a pinch of the salt and keep warm.
- Meanwhile, separate the romaine leaves, wash and dry them, then tear into bite-sized pieces. Squeeze over the lemon juice and drizzle with 1 tbsp of the remaining sunflower oil, then season with a pinch of salt and a little black pepper. Toss and set aside.
- Pat the steaks dry and season both sides with the remaining salt and black pepper. Finely slice the garlic. Wipe out the pan if needed, then heat 1 tbsp sunflower oil over medium-high heat.
- Add the steaks and cook for 2 to 3 minutes per side for medium-rare, or to your liking. Transfer to plates to rest. Reduce the heat to medium and add the butter and garlic, stirring for 30 to 60 seconds until fragrant but not browned.
- Pour in the white wine and simmer for 2 to 3 minutes, scraping up any browned bits, until slightly reduced and glossy. Taste and adjust seasoning with a pinch more salt or pepper if needed. Spoon the pan sauce over the steaks.
- In the same pan, add a little more sunflower oil if it looks dry, then fry the eggs over medium heat until the whites are set and the edges are crisp, 2 to 3 minutes. Top each steak with a fried egg. Serve with the chips and salad.
Recipe notes
Tips
- For the best sear, let the steaks sit at room temperature for 15 minutes, then pat very dry before they hit the pan.
- Keep the garlic moving in the butter and take it off the heat as soon as it smells sweet and nutty, so it does not turn bitter.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the eggs until the yolks are fully set.
Substitutions
- Replace Beef sirloin steak with beef rump steak for a slightly firmer, beefier bite.
- Replace Dry White Wine with dry red wine for a deeper, more robust pan sauce.
- Replace Sunflower oil with olive oil for a fruitier flavour in the salad and for frying.
Storage
- Refrigerate up to 2 days
- Store steak, chips, and salad separately where possible. Reheat steak and chips in a 200°C (390°F) oven until piping hot; fry fresh eggs to serve.
