Vol-au-Vent Belge (Chicken and Mushroom Puff Pastry)
Why this recipe works
- Flaky and creamy: Crisp puff pastry gives structure and contrast to the rich chicken and mushroom filling.
- Layered savoury flavour: Poaching the chicken creates a useful stock base, while browned mushrooms and white wine add depth to the sauce.
- Glossy velouté: Flour, hot stock and cream create a smooth sauce that coats the chicken without becoming heavy.

Common mistakes
- Boiling the chicken hard: Keep the poaching liquid at a gentle simmer; a rolling boil can toughen the chicken and make the stock cloudy.
- Rushing the sauce: Whisk in the hot stock gradually so the roux thickens evenly and the filling turns glossy rather than lumpy.
- Boiling after adding cream: Once the cream goes in, keep the heat low and warm the sauce gently to avoid a split or grainy finish.
Make-ahead tips
- Make the filling ahead: The chicken and mushroom filling can be prepared in advance and refrigerated for up to 2 days.
- Keep pastry and filling separate: Store the pastry cases separately from the sauce so the layers do not soften before serving.
- Reheat gently: Warm the filling slowly in a saucepan, loosening with a little stock if needed, and refresh the pastry at 180°C (355°F) before filling.
Ingredient notes
- Choose good puff pastry: All-butter puff pastry gives the best flavour and a clean, flaky rise for the cases.
- Use firm mushrooms: Fresh, firm cremini mushrooms brown better and give the sauce a deeper savoury flavour.
- White wine balance: Dry white wine adds brightness to the creamy sauce; if replacing it with stock, simmer briefly to concentrate the flavour.
Authenticity notes
- Belgian comfort cooking: Belgian-style vol-au-vent commonly centres on chicken, mushrooms and a creamy velouté served in crisp pastry.
- Typical serving: It is often served as a main course with chips, fries or a simple green salad to balance the richness.

Instructions
- Heat the oven to 200°C (390°F) and line a baking tray. Roll the puff pastry to about 3 mm thick, then cut 4 rounds (about 10 to 12 cm) and 4 smaller rounds (about 7 to 8 cm). Cut a hole from the centre of each smaller round to make rings, then stack each ring on a large round and press lightly to seal.
- Bake the pastry cases for 18 to 22 minutes until well risen and deep golden. If the centres puff up, press them down gently with the back of a spoon while still hot to create a cavity. Set aside on the tray while you make the filling.
- Put the chicken thighs in a saucepan with the chicken stock and bring to a gentle simmer. Cook for 12 to 15 minutes until the chicken is just cooked through, then lift it out to a bowl. Keep the poaching stock hot on a low heat.
- Finely chop the onion and slice the cremini mushrooms. Melt the unsalted butter in a frying pan over medium heat, then cook the onion with a pinch of the fine sea salt for 5 minutes until soft. Add the mushrooms and cook for 6 to 8 minutes until their liquid has evaporated and they are lightly browned.
- Stir the plain flour into the mushroom mixture and cook for 1 minute. Pour in the dry white wine and bubble for 2 minutes, scraping up any browned bits. Gradually whisk in 450 ml of the hot poaching stock and simmer for 6 to 8 minutes until thick and glossy.
- Shred or cut the chicken into bite-size pieces, then stir it into the sauce. Reduce the heat to low and stir in the double cream; warm gently for 2 to 3 minutes without boiling. Season with the remaining fine sea salt and the black pepper, then stir through most of the fresh parsley, saving a little to finish.
- Split the pastry cases open if needed, then spoon in the hot chicken and mushroom filling. Sprinkle with the reserved parsley and serve straight away while the pastry is still crisp. If the sauce thickens as it stands, loosen it with a splash of the remaining hot stock before filling.
Recipe notes
Tips
- Keep the sauce at a gentle simmer while it thickens; a hard boil can make it grainy once the cream is added.
- For the flakiest cases, keep the puff pastry cold and work quickly; if it softens, chill it briefly before baking.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the chicken is cooked until piping hot throughout.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner filling; reduce the poaching time slightly to avoid drying out.
- Replace Dry White Wine with Chicken stock for an alcohol-free version; simmer the sauce a minute longer to concentrate the flavour.
- Replace Double cream with Cooking cream for a lighter sauce; keep the heat low to prevent splitting.
Storage
- Refrigerate up to 2 days
- Store the filling and pastry separately in the fridge. Reheat the filling gently in a saucepan with a splash of chicken stock until piping hot, and refresh the pastry cases in a 180°C (355°F) oven for 5 to 7 minutes before filling.
