Vlaamse Asperges (Flemish White Asparagus with Butter and Eggs)
Why this recipe works
- Classic Flemish finish: Melted butter, chopped egg and parsley give the white asparagus its recognisable Flemish-style topping without masking its delicate flavour.
- Lightened richness: A little lemon in the cooking water and butter keeps the dish fresh against the richness of the egg and melted butter.
- Simple cooking method: The recipe relies on gentle boiling and straightforward assembly, making it approachable while still feeling polished.

Authenticity notes
- Flemish style: This preparation is closely associated with Belgian white asparagus season, where the spears are served simply with butter, egg and herbs.
- Serve with potatoes: New potatoes are a natural pairing, turning the asparagus from a side dish into a light seasonal meal.
Ingredient notes
- Peel thoroughly: White asparagus has a fibrous outer layer, so peeling from just below the tip to the base is essential for a tender result.
- Choose firm spears: Look for firm, smooth white asparagus with tightly closed tips; limp spears can cook unevenly and taste dull.
Timing notes
- Best served warm: The asparagus is at its best shortly after cooking, while the spears are tender and the butter is still fluid.
- Peeling takes time: Most of the hands-on work is in preparing the asparagus; once peeled, the cooking and assembly are quick.
Make-ahead tips
- Cook the eggs ahead: The eggs can be boiled in advance, chilled, then peeled and chopped shortly before serving.
- Keep leftovers separate: For the best texture, refrigerate asparagus, potatoes, egg and butter separately, then reheat the vegetables gently and melt the butter fresh.

Ingredients
Instructions
- Put the eggs in a saucepan, cover with cold water, and bring to the boil. Simmer for 10 minutes, then drain and cool under cold running water.
- Meanwhile, put the new potatoes in a large pot, cover with cold water, and add 1 tsp of the fine sea salt. Bring to the boil and cook for 15 to 20 minutes until tender, then drain and keep warm.
- Peel the white asparagus from just below the tips down to the base, then trim off the woody ends. Fill the pot with fresh water, add the remaining 1 tsp fine sea salt and squeeze in a little lemon juice.
- Bring the asparagus water to a gentle simmer, add the asparagus, and cook for 8 to 12 minutes until just tender when pierced with a knife tip. Lift out carefully with a slotted spoon and drain briefly.
- Melt the unsalted butter in a saucepan over low heat until fully liquid, without browning. Season the butter with the white pepper and a small squeeze of lemon juice to taste.
- Peel the eggs and chop them finely, then chop the fresh parsley. Serve the asparagus with the new potatoes, spoon over the melted butter, and finish with the chopped egg and parsley.
Recipe notes
Tips
- Keep the asparagus at a gentle simmer rather than a rolling boil so the spears stay intact and tender.
- If your asparagus is very thick, allow a couple of extra minutes and test the base of a spear for doneness.
- Food safety: if serving to young children, older adults, or anyone pregnant or immunocompromised, use eggs with the lion mark or another trusted food safety standard.
Substitutions
- Replace Fresh parsley with Fresh chives for a milder, oniony finish.
- Replace Lemon with a smaller amount of White wine vinegar for a sharper acidity in the butter.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly and refrigerate in an airtight container. Reheat asparagus and potatoes gently in a saucepan with a splash of water until piping hot, and melt the butter separately over low heat before serving.
