Belgische Groentestoof (Belgian Vegetable Stew)
Why this recipe works
- Naturally creamy body: Tender potatoes lightly thicken the stock before the cream is added, giving the stew body without needing flour.
- Gentle savoury depth: Leeks, carrots and celery are softened first, then simmered with thyme and bay for a rounded vegetable flavour.
- Simple one-pot method: Everything cooks in one large pot, making the recipe straightforward and easy to manage on a weeknight.

Ingredient notes
- Clean the leeks thoroughly: Slice the leeks before rinsing so any grit trapped between the layers can wash away easily.
- Use waxy, creamy potatoes: Yukon Gold potatoes hold their shape while still softening enough to help thicken the broth.
- Adjust dried thyme carefully: Dried thyme is more concentrated than fresh, so use it sparingly if making that swap.
Texture tips
- For a thicker stew: Crush a few tender potato pieces against the side of the pot, then stir them back into the broth.
- Keep the cream smooth: Once the double cream is added, warm the stew gently over low heat and avoid boiling.
Common mistakes
- Do not brown the vegetables: Soften the leeks, carrots and celery gently; browning would change the delicate flavour of the stew.
- Avoid a hard boil: A gentle simmer keeps the vegetables intact and helps the stock stay clear rather than cloudy.
Make-ahead tips
- Make ahead: The stew can be cooled and refrigerated in a sealed container for up to 3 days.
- Reheat gently: Warm it in a saucepan over low heat, stirring often, and do not let it boil once hot.
- Best texture: The vegetables are most distinct on the day the stew is made, though the flavour remains good after chilling.

Ingredients
Instructions
- Trim the leeks, then slice and rinse well to remove any grit. Peel the carrots and cut into small chunks; slice the celery. Peel the potatoes and cut into 2 cm pieces.
- Melt the unsalted butter in a large pot over a medium heat. Add the leeks, carrots and celery with a pinch of the fine sea salt, then cook for 8 to 10 minutes, stirring, until softened but not browned.
- Stir in the potatoes, fresh thyme and bay leaves. Pour in the vegetable stock and bring to a gentle simmer.
- Simmer gently for 20 to 25 minutes, stirring occasionally, until the potatoes are very tender and the broth looks slightly thickened. If you want it thicker, lightly crush a few potato pieces against the side of the pot and stir them back in.
- Reduce the heat to low and stir in the double cream. Warm for 2 to 3 minutes without boiling, then season with the remaining fine sea salt and the black pepper. Remove the thyme sprigs and bay leaves before serving.
