Wigilijny Barszcz z Uszkami (Polish Clear Beetroot Soup with Dumplings)

On Polish Christmas Eve tables, barszcz z uszkami brings together a clear ruby beetroot broth and tiny mushroom-filled dumplings whose name means “little ears”. The soup is prized for its clean, bright character: earthy beetroot is gently infused with bay, sharpened with vinegar and finished simply with black pepper and dill. The uszka add substance without making the broth heavy, with a savoury mushroom and onion filling wrapped in thin egg dough. Keeping the soup clear and the dumplings neatly sealed makes this an advanced but rewarding vegetarian dish, well suited to a festive dinner or any meal where a precise, elegant soup is wanted.

Why this recipe works

  • Clear, layered broth: Beetroot, bay leaves and vegetable stock build an earthy base, while vinegar added near the end keeps the flavour clean and gently sharp.
  • Classic serving style: Uszka bring the traditional mushroom-and-onion element that makes this Christmas Eve barszcz distinctive.
  • Good for preparing ahead: The broth and dumplings can be stored separately, which helps preserve the clarity of the soup and the texture of the uszka.

Authenticity notes

  • Christmas Eve context: Wigilijny barszcz is closely associated with Polish Wigilia, the Christmas Eve meal, where meat-free dishes are traditionally served.
  • Uszka are the classic pairing: The small folded dumplings are usually filled with mushrooms, adding savoury depth without making the broth heavy.

Timing notes

  • Let the beetroot infuse: Resting the beetroot in the hot broth after simmering deepens the colour and flavour before straining.
  • Add dumplings just before serving: Keep the uszka separate until serving so they stay tender and the broth remains clear.

Texture tips

  • Keep the broth clear: Simmer gently rather than boiling hard, and press the beetroot lightly when straining to avoid clouding the soup.
  • Seal the uszka well: Press the edges firmly around the filling so the dumplings hold their shape as they boil.

Make-ahead tips

  • Store separately: Keep the broth and cooked uszka in separate airtight containers so the dumplings do not absorb too much liquid.
  • Reheat gently: Warm the broth over a low heat until steaming hot, then refresh the dumplings briefly in simmering water before serving.
  • Freezing works best in parts: Freeze the broth and cooked uszka separately, then defrost in the fridge before reheating for the best texture.

Instructions

  1. Peel the beetroot and cut into thick slices. Put it in a stockpot with the vegetable stock and bay leaves, bring to a gentle simmer, then cook for 45 to 60 minutes until the beetroot is tender and the broth is a deep ruby colour. Take off the heat and leave to infuse for 15 minutes.
  2. Meanwhile, finely chop the mushrooms and onion. Melt the butter in a saucepan over a medium heat, add the onion with a pinch of the salt, and cook for 6 to 8 minutes until soft. Add the garlic and mushrooms and cook for 10 to 12 minutes until the mixture is dry and deeply savoury, then season with a little black pepper and leave to cool.
  3. Make the dough: put the plain flour in a mixing bowl and stir in the remaining salt. Beat the egg with the warm water, add to the flour, and mix to a firm dough. Knead for 6 to 8 minutes until smooth, then cover and rest for 20 minutes.
  4. Roll the dough thinly on a lightly floured surface and cut into 6 cm squares. Place a small amount of the mushroom filling in the centre of each square, fold into a triangle and press the edges to seal, then bring the two corners together and pinch to form little “ears”. Keep the formed uszka covered as you work so they do not dry out.
  5. Bring a large pot of salted water to the boil. Cook the uszka in batches for 2 to 3 minutes after they float to the surface, then lift out with a slotted spoon. Toss with a small knob of the butter from the pan if you like, to stop them sticking.
  6. Strain the beet broth through a sieve into a clean pot, pressing gently on the beetroot to extract flavour without clouding the soup. Warm the broth over a low heat, then stir in the apple cider vinegar and season with black pepper and salt to taste. Ladle into bowls, add the uszka, and finish with finely chopped fresh dill.

Recipe notes

Tips

  • For a clear broth, keep the barszcz at a gentle simmer and avoid vigorous boiling, which can make it cloudy.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs with a recognised food safety standard and cook the dumplings until piping hot throughout.

Substitutions

  • Replace unsalted butter with olive oil for a dairy-free version, keeping the cooking heat gentle so the onion does not brown.
  • Replace apple cider vinegar with white wine vinegar for a cleaner, sharper tang.

Storage

  • Refrigerate up to 3 days
  • Store the broth and uszka separately in airtight containers. Reheat the broth gently until steaming hot, and warm the uszka in simmering water for 1 to 2 minutes; add fresh dill at the end. Freeze the broth and cooked uszka separately for best texture, then defrost overnight in the fridge.
