Tex-Mex Beef Enchiladas with Red Sauce
Why this recipe works
- Built-in depth: The red sauce blooms ancho chilli powder, cumin and oregano before simmering with tomato, giving the enchiladas a deeper, rounder flavour.
- Bright finish: Lime stirred into the sauce lifts the richness of the beef and cheese without making the dish sharp.
- Saucy, cheesy finish: Baking the filled tortillas under sauce and cheddar gives a bubbling, savoury dish with soft tortillas and golden melted cheese.

Adjust the heat
- For less heat: Use a milder chilli powder in place of some of the ancho, and keep the lime finish to preserve balance.
- For more heat: Add a hotter chilli powder or finely chopped fresh chilli to the beef filling, tasting as you go.
- Keep it rounded: Cheddar and tomato soften the chilli, while lime keeps the sauce from tasting heavy.
Texture tips
- Coat, don’t drown: Make sure the tortillas are well covered with sauce, but avoid leaving dry edges exposed, as they can toughen during baking.
- Let them settle: Resting the enchiladas briefly after baking helps the sauce thicken slightly, making portions easier to lift from the dish.
- Watch the cheese: Bake only until the edges are bubbling and the cheese is melted and lightly golden; longer baking can dry the filling.
Ingredient notes
- About ancho chilli powder: Ancho brings smoky, fruity warmth rather than aggressive heat, which suits the tomato-based red sauce.
- Use pliable corn tortillas: Fresh, flexible corn tortillas roll more cleanly and are less likely to split once filled.
- Cheese choice: Cheddar gives a stronger savoury finish, while Monterey Jack melts more softly for a creamier topping.
Make-ahead tips
- Prep in stages: The sauce and beef filling can be made ahead and chilled separately, then assembled before baking.
- Freezer-friendly portions: Cool the baked enchiladas completely, wrap portions well and freeze for later meals.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, adding a small splash of water if the sauce has thickened.

Instructions
- Heat the oven to 200°C (390°F). Peel and finely chop the onion, then peel and finely chop the garlic.
- Make the sauce: warm the sunflower oil in a saucepan over medium heat, then cook half the garlic for 30 seconds until fragrant. Whisk in 2 tbsp ancho chili powder, 2 tsp ground cumin and 1 tsp dried oregano for 20 seconds, then whisk in the tomato passata, water, fine sea salt and black pepper.
- Bring the sauce to a gentle simmer and cook for 10 minutes, stirring occasionally, until slightly thickened. Take off the heat and stir in the juice of the lime.
- Cook the filling: heat the remaining sunflower oil in a large frying pan over medium-high heat. Add the onion and cook for 6 to 8 minutes until softened and lightly golden, then stir in the remaining garlic for 30 seconds.
- Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned with no pink remaining. Stir in 1 tsp ground cumin, 1 tbsp ancho chili powder, 1 tsp dried oregano, fine sea salt and black pepper, then cook for 1 minute.
- Pour about a third of the red sauce into the base of a baking dish and spread it out. Warm the corn tortillas briefly in a dry frying pan, 10 to 15 seconds per side, just until pliable.
- Divide the beef filling between the tortillas, roll them up, and arrange seam-side down in the dish. Pour over the remaining sauce, making sure the tortillas are well coated.
- Grate the cheddar cheese and scatter it over the top. Bake for 18 to 22 minutes until bubbling at the edges and the cheese is melted and lightly golden.
- Rest for 5 minutes so the sauce settles, then serve hot. Spoon a little extra sauce from the dish over each portion.
Recipe notes
Tips
- If your corn tortillas crack as you roll them, warm them a little longer so they become flexible before filling.
- For a smoother sauce, whisk continuously as you add the passata so the spices do not clump.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the beef is cooked through and the enchiladas are piping hot all the way through before serving.
Substitutions
- Replace Cheddar cheese with Monterey jack cheese for a milder, creamier topping.
- Replace Yellow onion with Red onion for a slightly sweeter flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; add a splash of water if the sauce has thickened. Freeze portions well wrapped for up to 2 months and defrost overnight in the fridge before reheating.
