Dolmades (Greek Stuffed Vine Leaves with Herbed Rice)

Wrapped in tender vine leaves, dolmades are one of the most recognisable Greek meze dishes: small savoury parcels with a lemony rice filling, plenty of fresh herbs and a generous olive oil finish. The leaves bring a gentle briny tang, while dill, parsley, onion and garlic keep the filling fragrant rather than heavy. Slow, gentle simmering is key, giving the rice time to cook through without splitting the rolls. Serve them warm as part of an appetiser spread, or chill them for a brighter, firmer bite with lemon wedges alongside.

Why this recipe works

  • Herby, lemony filling: Dill, parsley, onion, garlic, olive oil and lemon season the rice before cooking, so the flavour carries through each parcel.
  • Gentle simmering: Cooking the rolls slowly under a small plate keeps them compact while the rice softens and the vine leaves become tender.
  • Good warm or chilled: The flavours settle well after cooking, making dolmades especially practical for mezze platters, packed lunches or entertaining.

Timing notes

  • Let them settle: The covered 10-minute rest after simmering helps the rice finish steaming and makes the parcels easier to lift from the pot.
  • Flexible serving temperature: Serve them warm, at room temperature or chilled; if serving cold, allow them to cool fully before refrigerating.

Texture tips

  • Roll firmly, not tightly: Compact rolls hold their shape, but overfilling can split the leaves as the rice expands during cooking.
  • Keep the simmer low: A barely bubbling pot protects the delicate vine leaves and helps the rice cook evenly without bursting the parcels.

Ingredient notes

  • Rinse the vine leaves well: Jarred grape leaves are packed in brine, so rinsing removes excess salt and keeps the final flavour balanced.
  • Use fresh herbs if possible: Fresh dill and parsley give the filling its recognisable green, aromatic character; dried herbs will taste flatter here.

Make-ahead tips

  • Make ahead for better flavour: Dolmades can be cooked in advance and refrigerated with a little cooking liquid to keep the leaves moist.
  • Reheat gently: Warm them in a covered pan with a splash of water until piping hot, or serve straight from the fridge with extra lemon.

  1. Rinse the grape leaves well under cold running water to remove excess brine, then drain. If any leaves are very thick-stemmed, trim the stem flush with the leaf. Set aside a few torn leaves to line the pot later.
  2. Rinse the rice in a sieve until the water runs mostly clear, then drain well. Finely chop the onion, crush the garlic, and finely chop the dill and parsley. Juice 1 lemon and cut the other lemon into wedges for serving.
  3. In a mixing bowl, combine the rice, onion, garlic, dill, parsley, lemon juice, 60 ml of the olive oil, the fine sea salt, and black pepper. Mix thoroughly so the rice is evenly coated and the herbs are well distributed. The mixture should smell bright and lemony.
  4. Line the base of a large pot with a few grape leaves to prevent sticking. Lay one leaf shiny-side down, add about 1 tbsp of filling near the stem end, then fold in the sides and roll up tightly into a neat parcel. Repeat with the remaining leaves and filling, keeping the rolls compact but not bursting.
  5. Arrange the dolmades seam-side down in the pot in snug layers. Drizzle over the remaining 30 ml olive oil, then pour in the water so it comes close to the top layer without fully submerging the rolls. Place a small plate on top to keep them from unrolling as they cook.
  6. Bring the pot to a gentle simmer over medium heat, then reduce to low and cover. Simmer for 45 minutes, keeping the heat low so the liquid barely bubbles. They are ready when the rice is tender and the leaves are supple.
  7. Remove from the heat and leave covered for 10 minutes to settle and finish steaming. Carefully lift out a dolma and taste for tenderness, then transfer the rolls to a serving plate. Serve warm or chilled with lemon wedges for squeezing.

Recipe notes

Tips

  • Roll the parcels firmly, but do not overfill; the rice needs a little room to expand as it cooks.
  • Keep the simmer very gentle to avoid splitting the leaves and to help the dolmades cook evenly.
  • If serving chilled, cool to room temperature first, then refrigerate; the flavour improves after a few hours.

Substitutions

  • Replace Fresh dill with Fresh parsley for a more parsley-forward filling.
  • Replace Yellow onion with Shallot for a slightly sweeter, milder base.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container with a little of the cooking liquid to keep them moist. To reheat, warm gently in a covered pan with a splash of water until piping hot, or serve straight from the fridge with lemon.
