Revithokeftedes (Greek Chickpea Fritters with Herbs)
Why this recipe works
- Crisp outside, tender centre: Shallow-frying gives the patties a deep golden crust while the coarse chickpea mixture stays soft and gently textured inside.
- Fresh herb flavour: Parsley, mint, garlic and lemon zest cut through the richness of the frying oil and keep the fritters bright.
- Soaked chickpea base: Using soaked dried chickpeas rather than cooked chickpeas helps the mixture hold its shape and gives the fritters their characteristic bite.

Timing notes
- Plan for soaking: The dried chickpeas need a long soak before blending, so start them the night before or earlier in the day.
- Rest before shaping: A short rest after mixing helps the flour hydrate, making the patties easier to press together without crumbling.
Texture tips
- Drain thoroughly: Let the soaked chickpeas sit in a colander after rinsing; excess water loosens the mixture and weakens the crust.
- Fry in batches: Give the patties space in the pan so the oil temperature stays steady and the edges crisp instead of steaming.
- Shape firmly: Press each patty well before frying so the coarse chickpea mixture holds together in the pan.
Ingredient notes
- Use dried chickpeas: This style relies on soaked dried chickpeas; cooked or tinned chickpeas would make a softer, looser mixture.
- Fresh herbs matter: Parsley and mint give the fritters their clean, aromatic flavour, so use fresh herbs rather than dried where possible.
- Finish with lemon: A squeeze of lemon at the table brightens the fried patties and balances the savoury chickpea base.
Make-ahead tips
- Soak ahead: The chickpeas can be soaked in advance, then drained well before processing.
- Re-crisp when serving: Reheat cooked fritters on a baking tray at 200°C (390°F) until piping hot and crisp again.
- Freezer-friendly: Freeze cooled fritters in a single layer before bagging, then reheat from frozen at 200°C (390°F).

Instructions
- Soak the chickpeas in plenty of cold water for 12 hours, then drain well and rinse. Leave them in a colander for a few minutes so excess water drains away.
- Roughly chop the onion, garlic, parsley and mint. Finely zest the lemon, then cut it into wedges and set aside for serving.
- Tip the drained chickpeas into a food processor with the onion, garlic, herbs, lemon zest, plain flour, baking powder, fine sea salt and black pepper. Pulse until you have a coarse, slightly sticky mixture that holds together when pressed; scrape down the bowl as needed.
- Transfer the mixture to a bowl and let it rest for 10 minutes so the flour hydrates. Shape into small patties, about 4 cm wide, pressing firmly so they do not crumble.
- Pour the extra virgin olive oil into a large frying pan to a depth of about 1 cm and heat over medium until shimmering. Fry the patties in batches for 3 to 4 minutes per side until deep golden and crisp, adjusting the heat so they do not brown too quickly.
- Lift out with a spatula and let them drain briefly, then keep warm while you fry the remaining patties. Serve warm with greek yogurt and the lemon wedges for squeezing over.
Recipe notes
Tips
- Drain the soaked chickpeas very well; excess water makes the mixture loose and harder to shape.
- If the patties are browning before the centres feel tender, lower the heat and fry a little longer so they cook through without scorching.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised greek yogurt.
Substitutions
- Replace Fresh mint with extra Fresh parsley for a more parsley-forward flavour.
- Replace Plain flour with chickpea flour for a slightly nuttier taste and a firmer set.
- Replace Greek yogurt with crème fraîche for a richer, tangier dip.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 8 to 10 minutes until piping hot and crisp. Freeze in a single layer, then bag; reheat from frozen at 200°C (390°F) for 12 to 15 minutes.
