Aloo Gobi (Potato and Cauliflower Curry)

Aloo gobi belongs to the comforting family of dry North Indian vegetable curries, where potatoes and cauliflower are coated in a spiced tomato-onion masala rather than served in a loose sauce. Cumin, turmeric, ginger and garlic give the dish its warm, savoury base, while garam masala, fresh coriander and lemon lift the finish. The vegetables should be tender but still distinct, with the masala clinging to the edges and the cauliflower holding its shape. It is a practical everyday curry: simple enough for a weeknight, naturally vegan, and easy to serve with chapati, naan or basmati rice.

Why this recipe works

  • Spices built into the masala: Cooking the onion, ginger, garlic, cumin, turmeric and tomato first creates a concentrated base that coats the vegetables evenly.
  • Dry curry texture: The potatoes and cauliflower cook covered with only minimal added liquid, so they soften by steaming while the masala stays thick.
  • Fresh finish: Lemon and coriander lift the earthy potatoes, cauliflower and warm spices without making the curry wet.

Adjust the heat

  • For less heat: Remove the chilli seeds, use less chilli, or omit it entirely for a gentler version.
  • For more heat: Keep the chilli seeds in or add extra fresh chilli when frying the aromatics.
  • Keep the heat rounded: Finish with lemon to brighten the chilli and spices rather than letting the heat taste flat.

Texture tips

  • Keep the cauliflower intact: Cut the cauliflower into small but sturdy florets and stir gently so it cooks through without breaking apart.
  • Avoid a watery curry: Add water only in small splashes if the pan is catching; aloo gobi should finish dry, with the masala clinging to the vegetables.
  • Cook the potatoes evenly: Keep the potato pieces similar in size to the cauliflower so both become tender at roughly the same time.

Make-ahead tips

  • Good for meal prep: The curry keeps well in the fridge and can be reheated gently with a splash of water to loosen the masala.
  • Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating until piping hot.
  • Freshen before serving: Add the lemon and coriander after reheating for the brightest flavour and colour.

Serving ideas

  • Serve with flatbreads: Chapati or naan work well for scooping up the dry masala-coated vegetables.
  • Serve with rice: Basmati rice makes the curry more substantial, especially when served as part of a larger meal.
  • Finish with freshness: Scatter over coriander and add lemon to taste just before serving.

  1. Prepare the vegetables: peel and cut the potatoes into 2 cm chunks, cut the cauliflower into small florets, and finely chop the onion. Finely chop the chilli (remove seeds for less heat), grate the ginger, and crush the garlic. Chop the tomatoes and roughly chop the coriander; cut the lemon into wedges.
  2. Heat the rapeseed oil in a large frying pan over medium heat. Add the onion with a pinch of the salt and cook for 6 to 8 minutes, stirring, until soft and lightly golden. Stir in the chilli, ginger and garlic and cook for 1 minute until fragrant.
  3. Stir in the ground cumin and ground turmeric for 30 seconds, then add the tomatoes and the remaining salt. Cook for 5 to 7 minutes, stirring, until the tomatoes break down into a thick masala. If it starts to catch, add a splash of water and scrape the base of the pan.
  4. Add the potatoes and cauliflower and stir well to coat in the masala. Cover and cook on a low heat for 18 to 22 minutes, stirring every 5 minutes, until the potatoes are tender and the cauliflower is cooked through but still holding its shape. Add a small splash of water only if the pan looks dry; this is meant to be a dry curry.
  5. Remove the lid, sprinkle over the garam masala, and cook for 2 minutes to finish. Take off the heat, squeeze over lemon to taste, and fold through most of the fresh coriander. Serve hot with the remaining coriander scattered on top.

Recipe notes

Serving suggestions

This recipe pairs well with:

chapati basmati rice naan

Tips

  • Cut the potatoes and cauliflower to a similar size so they cook evenly and finish at the same time.
  • Keep the heat low once covered; the vegetables should steam and soften without the masala burning on the base of the pan.
  • Food safety: if serving vulnerable groups, wash fresh coriander well and use clean boards and knives for raw vegetables.

Substitutions

  • Replace rapeseed oil with olive oil for a slightly fruitier finish.
  • Replace garam masala with ground cumin for a simpler, earthier spice profile.
  • Replace lemon with tomato for acidity by adding one extra tomato and cooking it down fully.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a frying pan over a low heat with a splash of water, stirring until piping hot; add a fresh squeeze of lemon at the end. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
