Paneer Do Pyaza (Paneer Curry with Onions)
Why this recipe works
- Onions cooked two ways: Slowly browned sliced onions create a sweet, savoury base, while briefly cooked onion petals add freshness and structure at the end.
- Soft paneer, gentle crunch: Paneer stays tender in the simmered gravy, with the finishing onions providing the characteristic do pyaza bite.
- Rich without being heavy: Ghee, tomato, warm spices and kasuri methi give the curry depth while keeping the sauce balanced and spoonable.

Ingredient notes
- Use firm paneer: Choose paneer that holds its shape well, as the cubes are simmered and gently stirred through the gravy.
- Kasuri methi matters: Crushing dried kasuri methi between your palms releases its aroma and gives the curry its familiar restaurant-style finish.
- Ripe tomatoes give a better sauce: Well-ripened tomatoes break down more easily and bring natural acidity to balance the sweetness of the onions.
Texture tips
- Keep the paneer tender: Simmer gently and stir carefully once the paneer is added so the cubes stay intact rather than crumbling into the sauce.
- Protect the onion bite: Cook the onion petals briefly and fold them in just before serving so they remain lightly crisp rather than melting into the gravy.
Make-ahead tips
- Make the gravy ahead: The tomato-onion base can be cooked in advance, then reheated gently before adding paneer and finishing onions.
- Reheat with care: Warm the curry gently with a splash of water, stirring lightly to avoid breaking the paneer, until piping hot throughout.
Serving ideas
- Serve with breads: Naan or chapatis are ideal for scooping up the thick onion-rich gravy.
- Serve with rice: Jeera rice makes a simple pairing that lets the paneer and spiced gravy stay central.

Ingredients
Instructions
- Cut 3 onions into thin slices for the gravy. Cut the remaining onion into chunky petals (about 2 cm) and keep separate for finishing.
- Heat 2 tbsp ghee in a large frying pan over medium heat. Add the sliced onions with 1 tsp fine sea salt and cook for 12 to 15 minutes, stirring often, until deep golden and sweet.
- Grate the garlic and ginger, then stir into the pan and cook for 1 minute until fragrant. Add the ground cumin and ground coriander and cook for 30 seconds, stirring constantly.
- Grate the tomatoes (or finely chop them) and add to the pan with the remaining 0.5 tsp fine sea salt. Cook for 8 to 10 minutes until the tomatoes break down and the ghee begins to separate at the edges.
- Stir in the water and bring to a gentle simmer. Add the paneer (cut into bite-size cubes) and simmer for 6 to 8 minutes, stirring carefully so the paneer stays intact.
- Sprinkle in the garam masala and crush the dried kasuri methi between your palms as you add it. Simmer for 2 minutes, then taste and adjust seasoning if needed.
- In a small frying pan, heat the remaining 1 tbsp ghee over medium-high heat. Add the onion petals and cook for 2 to 3 minutes until lightly softened with a little colour, still keeping their bite.
- Fold the onion petals through the curry and take off the heat. Rest for 2 minutes so the flavours settle, then serve hot.

Serving suggestions
This recipe pairs well with:
Tips
- For the best do pyaza texture, keep the onion petals chunky and cook them briefly so they stay slightly crisp.
- If you are serving vulnerable groups, use pasteurised paneer and ensure the curry is simmered until piping hot throughout.
Substitutions
- Replace ghee with butter for a similar richness, keeping the heat moderate so it does not brown too quickly.
- Replace tomato with canned-chopped-tomatoes for convenience; cook a little longer to reduce to the same thickness.
Storage
- Refrigerate up to 3 days
- Cool, cover and refrigerate. Reheat gently in a frying pan with a splash of water, stirring carefully to avoid breaking the paneer; heat until piping hot.
