Laal Maas (Rajasthani Red Mutton Curry)
Why this recipe works
- Deep savoury base: Browning the meat and cooking the onions until golden gives the gravy a strong savoury foundation before the spices and yoghurt are added.
- Distinctive chilli character: Kashmiri chilli gives the curry its recognisable red colour and chilli-forward flavour without relying on a heavy tomato base.
- Slow-simmered tenderness: A gentle covered simmer helps bone-in goat become tender while the gravy reduces into a concentrated coating sauce.

Adjust the heat
- For less heat: Reduce the Kashmiri chilli slightly and keep extra chilli at the table for those who want more intensity.
- For a hotter curry: Use a more pungent ground chilli alongside the Kashmiri chilli, but add it gradually so the heat does not overpower the gravy.
- Keep the heat rounded: Serve with plain steamed rice and finish with the ghee as written; both help soften the sharp edge of the chilli.
Authenticity notes
- Rajasthani style: Laal Maas is recognised for its red chilli gravy, rich ghee finish and robust meatiness rather than a tomato-heavy sauce.
- About the chilli: Traditional versions often use regional dried red chillies; Kashmiri chilli is a practical choice for strong colour and approachable heat.
- Home-style serving: The gravy should be thick enough to coat the meat, making it well suited to plain rice that absorbs the spiced sauce.
Common mistakes
- Boiling the yoghurt: Add the yoghurt gradually over low heat and stir constantly; a hard boil at this stage can make the sauce split.
- Rushing the spice stage: Ground spices need only a brief stir in the fat. Too much heat here can make the chilli taste harsh or scorched.
- Cooking too aggressively: Once the liquid is added, keep the curry at a gentle simmer so the meat has time to soften without the gravy reducing too quickly.
Make-ahead tips
- Improves after resting: The curry keeps well and the spices settle further after a night in the fridge, making it a strong make-ahead option.
- Freezing: Cool completely before freezing in a sealed container, then thaw overnight in the fridge before reheating.
- Reheat gently: Warm slowly in a saucepan with a little water if needed, stirring often and avoiding a hard boil to keep the yoghurt gravy smooth.

Ingredients
Instructions
- Thinly slice the onion. Crush the garlic to a paste and finely grate the ginger; set both aside.
- Heat 2 tbsp of the ghee in a dutch oven over medium-high heat. Add the cinnamon, cardamom and cloves and cook for 30 to 45 seconds until fragrant.
- Add the goat and 1 tsp of the salt, then sear for 8 to 10 minutes, turning, until well browned in patches. If the pot looks dry, lower the heat slightly rather than adding liquid yet.
- Add the onion and cook over medium heat for 10 to 12 minutes, stirring often, until deep golden. Stir in the garlic and ginger and cook for 1 minute until the raw smell disappears.
- Lower the heat and stir in the ground Kashmiri chili, ground coriander and ground cumin for 30 seconds. Add the yogurt a spoonful at a time, stirring constantly, until fully incorporated and smooth.
- Pour in the water and bring to a gentle simmer, scraping up any browned bits from the base. Cover and cook on low for 70 to 80 minutes, stirring every so often, until the goat is tender and the gravy is a deep red.
- Uncover and simmer for 10 to 15 minutes until the gravy thickens and coats the meat. Stir in the remaining 1 tbsp ghee and the remaining 1 tsp salt, then rest off the heat for 5 minutes before serving.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer gentle once the yogurt is in; a hard boil can split the sauce.
- For a smoother gravy, crush the cardamom pods lightly before adding so they release their aroma, then remove the whole spices before serving if you prefer.
- This curry is very chilli-forward; if serving children or anyone sensitive to heat, reduce the ground Kashmiri chili slightly and let each person add more at the table.
Substitutions
- Replace Whole milk yogurt with Greek yogurt for a thicker, tangier gravy; loosen with a splash more Water if needed.
- Replace Ghee with Butter for a similar richness, keeping the heat moderate so it does not brown too quickly.
- Replace Yellow onion with Sweet onion for a slightly softer, sweeter base.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat with a splash of Water, stirring often, until piping hot; avoid boiling hard to keep the yogurt sauce smooth. Freeze for up to 2 months and thaw overnight in the fridge before reheating.
