Barfi (Milk Sweet Bars)
Why this recipe works
- Reduced-milk method: Slowly simmering whole milk concentrates its sweetness and body, creating the dense, fudgy texture that defines barfi.
- Simple but aromatic: Cardamom, saffron, ghee and pistachios bring fragrance, richness and nuttiness without overpowering the milk base.
- Sets neatly: Once firm, the mixture cuts cleanly into bars and stores well, making it practical for preparing ahead or serving in batches.

Timing notes
- Most of the time is reduction: The active cooking is mainly patient stirring and scraping as the milk thickens; it needs close attention towards the end.
- Let it set fully: Cut the barfi only once it feels firm to the touch, otherwise the bars may smear or lose their shape.
- Best serving texture: If chilled, let the bars sit at room temperature for 10 minutes before serving for a softer, creamier bite.
Common mistakes
- Forgetting the base of the pot: Milk solids can catch as the mixture reduces, so scrape the base and sides regularly, especially once it thickens.
- Setting it too early: Wait until the mixture pulls from the sides and a spoon leaves a brief clear trail; a loose mixture will not set cleanly.
- Cooking too aggressively: Keep the heat steady rather than fierce so the milk reduces evenly without scorching before it has thickened.
Ingredient notes
- Use whole milk: Whole milk gives the barfi its richness and structure; lower-fat milk is more likely to produce a softer, less creamy result.
- Cardamom options: Ground cardamom is convenient, while seeds crushed from pods give a fresher, more pronounced aroma.
- Toast the nuts if you like: Lightly toasted pistachios add a deeper nutty flavour and a cleaner contrast to the sweet milk base.
Make-ahead tips
- Make in advance: Barfi keeps well in an airtight container in the fridge and becomes firmer when chilled.
- Freezing works well: Freeze the cut bars in a single layer first, then transfer to a container and defrost in the fridge overnight.
- Prevent sticking: Place baking paper between layers if stacking the bars, especially once chilled or frozen.

Ingredients
Instructions
- Lightly grease a small baking tray with a little of the ghee. Roughly chop the pistachios and set aside.
- Pour the milk into a large pot and bring to a gentle simmer over medium heat, stirring often. Keep it at a steady simmer, scraping the base and sides regularly, until reduced by about half and noticeably thicker.
- Add the caster sugar and continue to cook, stirring frequently, until the mixture turns a deeper cream colour and becomes very thick. It is ready when it starts to leave the sides of the pot and a spoon dragged through leaves a clear trail for a couple of seconds.
- Lower the heat and stir in the remaining ghee, saffron and ground cardamom. Cook for a few minutes, stirring constantly, until glossy and cohesive.
- Scrape the mixture into the prepared tray and level the top quickly with the back of a spoon. Sprinkle over the pistachios and press them in gently so they adhere.
- Leave at room temperature until fully set and firm to the touch. Cut into 16 neat bars.
Recipe notes
Tips
- Stir and scrape the base and sides often as the milk reduces, especially towards the end, to prevent scorching and to keep the texture smooth.
- If the mixture seems loose after adding the ghee and spices, keep cooking on low heat until it pulls cleanly from the sides of the pot.
- For best flavour, lightly toast the pistachios in a dry pan until just fragrant, then cool before chopping.
Substitutions
- Replace pistachios with almonds for a different nut topping.
- Replace ground cardamom with crushed cardamom pods (seeds only) for a fresher aroma.
- Replace caster sugar with granulated sugar; it will take a little longer to dissolve.
Storage
- Refrigerate up to 7 days
- Store in an airtight container, with baking paper between layers if stacking. Chill for a firmer bite; bring to room temperature for 10 minutes before serving. Freeze in a single layer, then transfer to a container; defrost in the fridge overnight.
