Indian Green Curry Rice Bowl

A green curry rice bowl brings together the comfort of steamed basmati rice with a vivid, coconut-enriched sauce inspired by Indian flavours. Spinach and fresh coriander give the curry its colour and clean herbal depth, while ginger, garlic, cumin, garam masala and green chilli add warmth without making the dish feel heavy. Paneer provides a mild, satisfying bite and peas bring sweetness, both simmered gently so they stay tender in the creamy sauce. Finished with lime, it is a flexible vegetarian dinner that feels fresh, filling and well suited to everyday cooking.

Why this recipe works

  • Layered green flavour: Softened onion, ginger, garlic, cumin and garam masala create a savoury base before the spinach, coriander and coconut milk are blended in.
  • Creamy without heaviness: Coconut milk gives the sauce body, while lime and fresh herbs keep the finish bright rather than overly rich.
  • Built for bowls: Paneer and peas make the curry satisfying, and basmati rice turns it into a complete vegetarian dinner with minimal extra sides needed.

Adjust the heat

  • For a gentler curry: Remove the chilli seeds and use fewer chillies at first; more heat can always be added after tasting.
  • For more heat: Blend in extra green chilli or finish the bowls with finely sliced fresh chilli for a sharper kick.
  • Balance with lime: Add the lime juice gradually at the end; acidity helps lift the heat and keeps the coconut sauce tasting fresh.

Texture tips

  • Keep the sauce gentle: Once the coconut milk is added, simmer gently rather than boiling hard to help the sauce stay smooth.
  • For a finer sauce: Blend until fully smooth, then strain if you prefer a silkier, more restaurant-style texture.
  • Protect the paneer: Add the paneer near the end and stir carefully so the cubes heat through without breaking or becoming firm.

Make-ahead tips

  • Store rice and curry separately: Keeping the rice apart from the curry helps preserve the texture and makes reheating easier.
  • Reheat gently: Warm the curry over low heat with a splash of water if needed, stirring carefully to keep the paneer intact.
  • Freeze the curry only: The curry freezes better than the rice; defrost overnight in the fridge before reheating gently.

Ingredient swaps

  • Use tofu instead of paneer: Extra-firm tofu gives a similar bite and makes the curry dairy-free when paired with a neutral oil.
  • Change the herb profile: Fresh mint can replace coriander for a cooler, more aromatic green sauce.
  • Use ghee for richness: Ghee can replace sunflower oil for a deeper, buttery flavour if dairy is not a concern.

  1. Rinse the basmati rice until the water runs mostly clear. Tip into a large pot with 700 ml water and 1 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes, then fluff with a fork.
  2. Meanwhile, roughly chop the onion. Peel the ginger and garlic, then roughly chop them; trim the green chilli peppers (remove seeds for less heat).
  3. Heat the sunflower oil in a saucepan over medium heat. Add the onion and a pinch of the remaining salt, then cook for 6 to 8 minutes until softened and lightly golden. Stir often so it does not catch.
  4. Add the ginger, garlic, ground cumin and garam masala, and cook for 1 minute until fragrant. Add the spinach and cook for 1 to 2 minutes until just wilted. Take off the heat for a moment to cool slightly.
  5. Scrape the onion mixture into a blender with the fresh coriander and coconut milk. Blend until smooth and vividly green, then return to the saucepan. Bring to a gentle simmer over low to medium-low heat.
  6. Cut the paneer into bite-sized cubes and add to the sauce with the frozen peas. Simmer gently for 6 to 8 minutes until the peas are tender and the paneer is heated through, stirring carefully so the paneer stays intact. Taste and season with the remaining fine sea salt as needed.
  7. Cut the lime in half and squeeze the juice into the curry, adding it gradually to taste. Spoon rice into bowls and ladle the green curry over the top. Finish with any remaining fresh coriander if you like.

Recipe notes

Tips

  • Keep the curry at a gentle simmer after adding the coconut milk; a hard boil can cause it to split.
  • For a smoother sauce, blend for a full minute, then pass through a sieve-strainer if you prefer a finer texture.
  • If serving to children or anyone sensitive to heat, remove the chilli seeds and start with 1 green chilli pepper, adding more only after tasting.

Substitutions

  • Replace Fresh coriander with Fresh mint for a different, cooling herbal note.
  • Replace Paneer with Extra-firm tofu for a dairy-free alternative with a similar bite.
  • Replace Sunflower oil with Ghee for a richer, more traditional flavour.

Storage

  • Refrigerate up to 3 days
  • Cool the curry and rice quickly, then refrigerate in separate airtight containers. Reheat the curry gently in a saucepan over low heat with a splash of water if needed, and reheat the rice in the microwave until piping hot. Freeze the curry (without the rice) for up to 2 months; defrost overnight in the fridge before reheating.
