Indian Chickpea and Spinach Bowl (Chana Palak Style)
Why this recipe works
- Layered masala: Softened onion, garlic, ginger and toasted ground spices give the tomato base depth before the chickpeas are added.
- Fast but satisfying: Canned chickpeas keep the cooking time manageable while still giving the bowl substance and protein-rich texture.
- Good for batch cooking: The chickpea and spinach masala stores and reheats well, making it useful for lunches or quick dinners through the week.

Authenticity notes
- Bowl-style serving: Chana palak usually refers to chickpeas cooked with spinach in a spiced masala; serving it over rice as a bowl is a practical, modern format.
Ingredient notes
- Prepare mature spinach: If the spinach has thick stalks, remove them before cooking so the leaves wilt evenly and stay tender.
- Reduce the tomatoes properly: Let the tomato masala thicken until it looks glossy and concentrated; this gives the finished sauce a fuller flavour.
Common mistakes
- Stopping the masala too soon: If the tomatoes are still watery, the chickpeas will taste thin rather than well coated. Simmer until the sauce is visibly thicker.
- Adding spinach too early: Stir the spinach in near the end so it wilts quickly without becoming dull or overcooked.
Make-ahead tips
- Keep rice separate: For the best texture, store the masala separately and cook or reheat rice just before serving.
- Freeze the masala: The chickpea and spinach mixture freezes well once cooled; defrost in the fridge before reheating gently.
- Reheat with a little liquid: Warm the masala over low heat with a splash of water if needed, stirring until piping hot.

Instructions
- Rinse the basmati rice in a sieve until the water runs clearer. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, finely chop the yellow onion, crush the garlic, and finely grate the ginger root. Roughly chop the fresh coriander, keeping a little aside for serving. Drain and rinse the canned chickpeas in a colander.
- Heat the rapeseed oil in a large frying pan over medium heat. Add the onion with a pinch of the remaining salt and cook for 8 to 10 minutes, stirring, until softened and lightly golden. Stir in the garlic and ginger and cook for 1 minute until fragrant.
- Add the ground cumin, ground turmeric and garam masala and stir for 30 seconds to toast the spices. Tip in the canned chopped tomatoes and simmer for 10 to 12 minutes, stirring occasionally, until the masala looks thicker and the oil starts to separate at the edges. Season with the remaining fine sea salt.
- Stir in the chickpeas and simmer for 5 minutes to warm through and let them take on the sauce. Add the spinach in handfuls and cook for 2 to 3 minutes until wilted and glossy. Stir through most of the coriander.
- Fluff the rice with a fork and divide between two bowls. Spoon over the chana palak masala and finish with the reserved coriander. Serve straight away while hot.
Recipe notes
Tips
- For a richer, more rounded masala, keep simmering the tomatoes until they look jammy and the oil begins to show at the edges before adding the chickpeas.
- If your spinach is very mature, remove any tough stalks so it wilts quickly and stays tender.
Substitutions
- Replace rapeseed oil with olive oil for a fruitier base.
- Replace spinach with baby kale for a slightly firmer, earthier green.
Storage
- Refrigerate up to 3 days
- Cool the chickpea and spinach masala quickly, then refrigerate in a sealed container for up to 3 days. Reheat in a saucepan with a splash of water over low heat until piping hot; cook fresh rice if possible. The masala freezes well for up to 2 months; defrost overnight in the fridge before reheating.
