Gochujang-Glazed Salmon

Gochujang-glazed salmon brings the deep savoury heat of Korean fermented chilli paste to a quick oven-baked fish dinner. The glaze combines gochujang with soy sauce, honey, sesame oil and garlic, giving the salmon a glossy coating that is salty, gently sweet, umami-rich and lightly sticky at the edges. Short-grain rice makes a soft, neutral base for the bold sauce, while quick vinegared cucumber adds freshness and crunch. It is a practical weeknight dish with a composed, bowl-style feel, finished simply with roasted sesame seeds.

Why this recipe works

  • Deep savoury glaze: Gochujang, soy sauce, sesame oil, honey and garlic create a sticky coating with heat, sweetness, saltiness and fermented umami.
  • Fast cooking: The salmon bakes in minutes while the rice steams, making the timing practical for a weeknight meal.
  • Fresh contrast: Rice-vinegar cucumber cuts through the richness of the glaze and keeps the bowl-style serving bright.

Adjust the heat

  • For less heat: Use a little less gochujang and lean on the honey, soy sauce and sesame oil to keep the glaze rounded.
  • For more heat: Increase the gochujang slightly, or add a small pinch of chilli flakes if you want a sharper finish.
  • Keep the sides simple: Plain short-grain rice and lightly pickled cucumber help soften the chilli heat without dulling the flavour.

Timing notes

  • Start with the rice: Get the rice cooking first so it can steam while the salmon is glazed and baked.
  • Serve soon after baking: The salmon is best when the glaze is still glossy and the fish is just cooked through.

Ingredient notes

  • About gochujang: Gochujang is a Korean fermented chilli paste with sweetness, saltiness and savoury depth; brands vary in heat and intensity.
  • Cucumber acidity: Rice vinegar gives the cucumber a gentle brightness, while white-wine vinegar makes it slightly sharper.

Make-ahead tips

  • Store separately: Keep the salmon, rice and cucumber in separate airtight containers so the cucumber stays crisp and the rice reheats properly.
  • Reheat gently: Warm the rice with a splash of water until piping hot, and reheat the salmon gently in a 180°C (355°F) oven to avoid drying it out.

  1. Heat the oven to 220°C (430°F). Rinse the rice in cold water until the water runs mostly clear, then add it to a saucepan with the water and a pinch of fine sea salt.
  2. Bring the rice to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, still covered, for 5 minutes to finish steaming.
  3. Meanwhile, in a mixing bowl, stir together the gochujang, soy sauce, honey, toasted sesame oil and finely grated garlic. Put the salmon on a baking tray and brush generously with most of the glaze, reserving a little for finishing.
  4. Bake the salmon for 8 to 10 minutes, until just cooked through and the glaze is glossy and slightly sticky. If you like, brush with the reserved glaze for the last 1 minute of baking.
  5. Thinly slice the cucumber and toss with the rice vinegar and a pinch of fine sea salt. Serve the salmon with the steamed rice and cucumber, then sprinkle over the roasted sesame seeds.

Recipe notes

Tips

  • For the best texture, take the salmon out when it flakes easily at the thickest part but still looks juicy; it will finish cooking as it rests for a minute.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the salmon until piping hot throughout.

Substitutions

  • Replace honey with agave syrup for a similar sweetness and shine.
  • Replace rice vinegar with white-wine-vinegar for a slightly sharper quick cucumber.

Storage

  • Refrigerate up to 2 days
  • Cool the salmon and rice quickly, then refrigerate in separate airtight containers. Reheat the rice with a splash of water in the microwave until piping hot; reheat the salmon in a 180°C (355°F) oven for 6 to 8 minutes until hot, or enjoy it cold. Keep the cucumber separate and add just before serving.
