Larb Platter (Thai Minced Pork Salad)
Why this recipe works
- Bright, savoury balance: Lime juice cuts through the richness of the pork while fish sauce adds deep savouriness.
- Light but textured: Toasted rice crumbs bring a nutty crunch that contrasts with the tender minced pork and crisp lettuce.
- Fresh herbal finish: Mint, coriander, spring onion and shallot add fragrance and lift, keeping the salad vivid rather than heavy.

Adjust the heat
- For a gentler heat: Remove the chilli seeds before chopping, or use less chilli and let people add extra at the table.
- For more punch: Add extra fresh chilli or serve sliced chilli alongside the platter so the heat can be adjusted per wrap.
Ingredient notes
- Use fragrant herbs: Fresh mint and coriander are central to the character of larb, so avoid adding them while the pork is still very hot.
- Toast the rice crumbs properly: Cook them until lightly golden and nutty, then cool before mixing so they keep their texture.
- Balance at the end: Taste after tossing and add more lime juice if the salad needs a sharper, brighter finish.
Serving ideas
- Serve as a wrap platter: Pile the larb in the centre and arrange lettuce leaves and cucumber around it for easy sharing.
- Add rice for a fuller meal: Serve with steamed jasmine rice or sticky rice if you want to make the platter more substantial.
Common mistakes
- Do not dry out the pork: Cook the mince until no pink remains, then take it off the heat before seasoning so it stays tender.
- Add herbs after cooling slightly: Let the pork stand briefly before tossing with the herbs to keep them bright and aromatic.

Instructions
- Toast the rice crumbs in a dry frying pan over medium heat for 3 to 5 minutes, stirring, until lightly golden and nutty. Tip into a mixing bowl to cool.
- Finely slice the shallots and spring onions. Finely chop the red chilli, mint and coriander, then juice the limes.
- Return the frying pan to medium-high heat and add the minced pork. Cook for 6 to 8 minutes, breaking it up with a wooden spoon, until cooked through with no pink remaining.
- Take the pan off the heat and stir in the fish sauce and lime juice. Let it stand for 2 minutes so the flavours settle and the pork cools slightly.
- Scrape the pork into the bowl with the toasted rice crumbs, then add the shallots, spring onions, chilli, mint and coriander. Toss well, then taste and adjust with a little more lime juice if you like it sharper.
- Separate the butterhead lettuce into leaves and slice the cucumber. Pile the larb onto a platter and serve with the lettuce leaves and cucumber for wrapping and sharing.
Recipe notes
Tips
- For the best texture, let the pork cool for a couple of minutes before adding the herbs so they stay bright and fragrant.
- If serving to children or anyone sensitive to heat, remove the seeds from the red chilli before chopping.
- If you are pregnant, elderly, or immunocompromised, make sure the pork is cooked until piping hot all the way through.
Substitutions
- Replace rice crumbs with panko breadcrumbs, toasted in the same way, for a similar crunch.
- Replace shallot with white onion for a slightly stronger, sharper bite.
- Replace butterhead lettuce with romaine lettuce leaves for sturdier wraps.
Storage
- Refrigerate up to 2 days
- Store the larb in an airtight container in the fridge. Reheat gently in a frying pan until piping hot, then cool slightly before adding a small handful of freshly torn mint and coriander if you have any left; keep lettuce and cucumber separate and serve cold.
