Thai Cashew Chicken Bowl
Why this recipe works
- Glossy savoury sauce: Light soy sauce, oyster sauce and sugar create a balanced stir-fry coating that clings to the chicken rather than turning soupy.
- Crunch and tenderness: Juicy chicken thighs, just-tender vegetables and toasted cashews give the bowl a satisfying mix of textures.
- Fast wok cooking: Once the rice is on, the chicken and vegetables cook quickly in the wok, making the recipe practical for lunch or a weeknight dinner.

Texture tips
- Keep the sauce glossy: Add the sauce only once the chicken is cooked and the vegetables are nearly tender, then toss briefly so it coats rather than pools.
- Preserve the cashew crunch: Toast the cashews first and return them to the wok right at the end so they stay crisp.
Ingredient notes
- Use chicken thighs for juiciness: Boneless, skinless thighs stay tender during high-heat stir-frying and suit the savoury sauce well.
- Choose unsalted cashews: Unsalted nuts give better control over seasoning, especially because soy sauce and oyster sauce already bring saltiness.
Common mistakes
- Using a cool wok: A properly hot wok helps the chicken brown and the vegetables cook quickly without releasing too much moisture.
- Adding aromatics too early: Garlic and ginger only need a short burst of heat; adding them too soon can make them catch before the sauce goes in.
Make-ahead tips
- Store rice and stir-fry separately: Keeping the rice and chicken mixture in separate containers helps the rice stay fluffy and prevents the sauce from soaking in too much.
- Reheat gently with moisture: Warm the chicken mixture in a pan with a splash of water until piping hot, then add spring onion and lime after reheating.

Ingredients
Instructions
- Rinse the jasmine rice until the water runs mostly clear, then add it to a saucepan with the water. Bring to the boil, cover, and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 10 minutes.
- Meanwhile, cut the chicken into bite-sized pieces. Thinly slice the onion and pepper, finely chop the garlic, and grate the ginger. In a small bowl, stir together the light soy sauce, oyster sauce and caster sugar until the sugar dissolves.
- Heat a wok over medium-high heat and toast the cashew nuts for 2 to 3 minutes, stirring, until lightly golden; tip onto a plate. Add the toasted sesame oil to the wok, then stir-fry the chicken for 4 to 6 minutes until browned and cooked through. Add the onion and pepper and cook for 3 to 4 minutes until just tender.
- Add the garlic and ginger and stir-fry for 30 seconds until fragrant. Pour in the sauce and toss for 1 to 2 minutes until glossy and clinging to the chicken. Return the cashews to the wok, then take off the heat.
- Slice the spring onions and cut the lime into wedges. Fluff the rice, divide between bowls, and spoon the cashew chicken over the top. Finish with spring onions and a squeeze of lime to taste.
Recipe notes
Tips
- Keep the wok hot and stir constantly once the sauce goes in; it thickens quickly and should coat the chicken rather than pool in the pan.
- For the best crunch, toast the cashew nuts until just golden, then add them back right at the end so they stay crisp.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner bowl; reduce the stir-fry time slightly to avoid drying out.
- Replace Toasted sesame oil with Olive oil for a milder flavour, then finish with extra lime for brightness.
- Replace Cashew nuts with Peanuts for a more robust crunch and a slightly deeper roasted flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate the rice and stir-fry in separate airtight containers. Reheat the chicken mixture in a frying pan with a splash of water until piping hot, and reheat the rice in the microwave until steaming; add the spring onion and lime after reheating.
