Vietnamese Satay Chicken Bowl with Rice Noodles

Rice noodle bowls are popular across Vietnamese cooking for their mix of cool noodles, fresh herbs, crunchy vegetables and savoury grilled protein, usually finished with a light, tangy dressing. This Vietnamese-inspired version uses chicken thighs in a satay-style marinade of peanut butter, lemongrass, garlic, lime and fish sauce, giving the meat a nutty, aromatic coating that chars well under the grill. Cucumber, carrot, beansprouts, spring onion and coriander keep the bowl bright and crisp, while the rice vinegar dressing lifts the richness. It is a flexible lunch or light dinner that works best served freshly assembled, with the warm sliced chicken against the cold noodles and salad.

Why this recipe works

  • Aromatic marinade: Peanut butter gives the chicken richness, while lemongrass, garlic, lime and fish sauce add savoury, citrusy depth.
  • Fresh crunch: Cool noodles, crisp vegetables and charred chicken create a balanced bowl with plenty of contrast.
  • Bright dressing: Rice vinegar and sugar lift the nutty chicken and keep the bowl light rather than heavy.

Timing notes

  • Short marinating window: The chicken only needs a brief marinate while the noodles and vegetables are prepared, but a little longer will deepen the flavour if time allows.
  • Best served freshly assembled: Dress the bowls just before serving so the noodles stay springy and the vegetables keep their crunch.

Ingredient notes

  • Use lemongrass well: Bruising the lemongrass before chopping helps release its citrusy aroma into the marinade.
  • Watch the fish sauce: Fish sauce brings salt and umami, so taste the finished bowl before adding any extra seasoning.

Make-ahead tips

  • Keep components separate: Store the chicken, noodles, vegetables and dressing separately so the salad stays crisp and the noodles do not soak up the dressing.
  • Reheat only the chicken: Warm the chicken until piping hot, then serve it with the cold noodles and salad for the intended contrast.

Texture tips

  • Keep the noodles springy: Rinse the cooked rice noodles under cold water straight away to stop them softening further.
  • Encourage charring: Use a properly hot grill or grill pan so the peanut marinade caramelises at the edges before the chicken dries out.

  1. In a bowl, mix the lemongrass, garlic, peanut butter, juice of the lime, fish sauce and sesame oil until smooth. Add the chicken thighs and turn to coat well. Leave to marinate for 15 minutes while you prep the rest.
  2. Bring a large pot of water to the boil and cook the rice noodles according to the packet instructions until just tender. Drain, rinse under cold water to stop the cooking, then drain well. Divide between two bowls.
  3. Cut the cucumber into thin batons and peel the carrot into ribbons. Thinly slice the spring onion and pick the coriander leaves. Arrange the cucumber, carrot, bean sprouts, spring onion and coriander over the noodles.
  4. Heat the grill to medium-high and cook the chicken for 5 to 7 minutes per side, until charred at the edges and cooked through. Rest for 3 minutes, then slice. Add the chicken to the bowls.
  5. Whisk the rice vinegar, water and sugar until the sugar dissolves. Spoon the dressing over the bowls and serve straight away.

Recipe notes

Tips

  • For the best flavour, bruise the lemongrass before chopping it so it releases more aroma into the marinade.
  • If using a grill pan, let it get properly hot before adding the chicken so you get good charring without overcooking.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, cook the chicken until piping hot throughout.

Substitutions

  • Replace rice noodles with rice vermicelli for a lighter, quicker-cooking noodle.
  • Replace rice vinegar with white vinegar for a sharper, less sweet dressing.
  • Replace fresh coriander with fresh mint for a different, bright herbal finish.

Storage

  • Refrigerate up to 2 days
  • Store the chicken, noodles and vegetables separately in airtight containers. Reheat the chicken in a frying pan over medium heat until piping hot, and keep the noodles and salad cold; dress just before serving.
