Asado Mixto (Mixed Grill with Chimichurri, Peppers and Onion)
Why this recipe works
- Built-in flavour: The same garlic, herb, vinegar and lemon mixture works as both marinade and chimichurri, linking the grilled meats with the sauce.
- Char and tenderness: High-heat grilling gives the peppers, onion and meat browned edges while the short rest helps keep the skewers juicy.
- Made for sharing: Mixed meats and vegetables on skewers make the platter easy to serve straight from the grill with chimichurri on the side.

Timing notes
- Rest before serving: Let the skewers sit for a few minutes after grilling so the meat relaxes and the juices settle before slicing or serving.
- Best served hot: Asado mixto is at its best straight from the barbecue, while the meat is juicy and the vegetables still have their charred edges.
Common mistakes
- Packing the skewers too tightly: Leave a little space between the meat and vegetables so heat can circulate and everything browns instead of steaming.
- Letting the sausage burn: If the sausage pieces are thick, move the skewers to a cooler part of the grill once they have colour so they can finish cooking through.
- Check all the meats: These mixed skewers share raw-chicken contact, so check the thickest pieces of beef, chicken and sausage with a food thermometer: all must reach at least 74°C (165°F) before leaving the grill.
Make-ahead tips
- Make the chimichurri first: The herb sauce can be mixed before grilling and held separately, giving the flavours time to settle while the meat cooks.
- Keep sauce separate: For leftovers, refrigerate the grilled meat and vegetables apart from the chimichurri so the sauce stays fresh and vibrant.
Authenticity notes
- Mixed grill style: Asado is closely associated with Latin American barbecue cooking; this version keeps the mixed-meat spirit in a practical skewer format.
- Chimichurri pairing: The bright parsley, vinegar and garlic sauce is a classic partner for grilled meats, cutting through richness and lifting smoky flavours.

Instructions
- Soak the skewers in water for 20 minutes if using wooden ones. Finely chop the garlic and parsley. Zest the lemon, then cut it in half.
- In a mixing bowl, whisk together the garlic, parsley, dried oregano, ground cumin, red wine vinegar, extra virgin olive oil, lemon zest, 2 tbsp lemon juice, fine sea salt and black pepper. Spoon about one third into a small bowl to serve as chimichurri later. Keep the remaining mixture as the marinade.
- Cut the beef and chicken into bite-sized pieces. Add them to the marinade and turn well to coat, then cover and refrigerate while you prepare the vegetables. Slice the red pepper and red onion into chunky pieces that will sit securely on skewers, using a clean board and knife.
- Heat a barbecue grill to high and clean and oil the grates. Thread skewers, alternating marinated beef, marinated chicken, pork sausage pieces, red pepper and red onion. Leave a little space between pieces so they cook evenly.
- Grill the skewers, turning every 2 to 3 minutes, until the vegetables are charred at the edges and the meats are cooked through, starting to check after 10 to 14 minutes. Because the meats share contact with raw chicken, use a food thermometer to check that the thickest beef, chicken and sausage pieces all reach at least 74°C (165°F), cooking longer if needed. If the sausages are thick, move the skewers to a cooler part of the grill for a few extra minutes to finish cooking without burning.
- Rest the skewers for 3 to 5 minutes. Serve hot with the reserved chimichurri on the side and extra lemon wedges for squeezing. If you like, spoon any resting juices over the platter before serving.
Recipe notes
Tips
- For the best char without drying the meat, keep the grill hot and turn the skewers frequently so they colour evenly.
- If you are serving children, offer the chimichurri on the side, but cook their skewers to the same safe temperature as everyone else; do not take them off early.
- Food safety: use a food thermometer to check that the thickest beef, chicken and sausage pieces all reach at least 74°C (165°F); colour and clear juices alone are not reliable safety checks.
Substitutions
- Replace Red wine vinegar with White wine vinegar for a slightly softer acidity.
- Replace Dried oregano with Fresh oregano, using about double the amount for a brighter, greener flavour.
- Replace Beef steak with Beef sirloin steak for a tender, quick-grilling option.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat on a hot grill or in a frying pan with a splash of water until piping hot, or enjoy cold sliced into salads; keep the chimichurri separate and use within 2 days for best flavour.
