Moqueca-Inspired Veggie Bowl with Coconut Milk and Tomato

Taking its cue from Brazilian moqueca, a coconut milk and tomato stew often associated with peppers, aromatics and a vivid finish, this veggie bowl turns the idea into an easy plant-based meal. Courgette, red pepper and chickpeas simmer in a creamy, lightly spiced sauce with garlic, onion, cumin and a little chilli, then lime and coriander lift the richness at the end. Served over fluffy basmati rice, it has the comfort of a stew with the freshness of a grain bowl, making it well suited to weekday lunches or relaxed dinners.

Why this recipe works

  • Layered savoury base: Onion, garlic, tomato, cumin and chilli flakes build depth before the coconut milk is added.
  • Creamy but fresh: Coconut milk gives the stew body, while lime juice and coriander keep the finish bright rather than heavy.
  • Good for planning ahead: The stew stores well separately from the rice and reheats gently without losing its saucy texture.

Authenticity notes

  • Moqueca-inspired, not traditional: Classic moqueca is usually a Brazilian seafood stew; this version keeps the coconut, tomato, lime and coriander profile but uses vegetables and chickpeas.
  • Palm oil character: Palm oil gives the stew a more distinctive colour and flavour. Olive oil makes a milder, cleaner-tasting version.

Adjust the heat

  • For less heat: Use only a small pinch of chilli flakes and let people add more at the table.
  • For more warmth: Increase the chilli flakes gradually, tasting after the stew has simmered so the heat has time to infuse.

Ingredient notes

  • Add lime at the end: Stir in the lime juice off the heat and adjust to taste so the stew stays bright and balanced.
  • Use ripe tomatoes: Ripe tomatoes give the sauce better sweetness and acidity; less ripe tomatoes may need a little extra lime at the end.

Make-ahead tips

  • Store rice and stew separately: Keeping them in separate airtight containers helps the rice stay fluffy and prevents it from soaking up too much sauce.
  • Reheat gently: Warm the stew over a low to medium heat until piping hot, adding a splash of water if the coconut sauce has thickened.
  • Freeze the stew only: The stew freezes well; defrost it overnight in the fridge before reheating. Cook fresh rice for the best texture.

  1. Rinse the basmati rice until the water runs mostly clear. Tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. Meanwhile, peel and finely chop the yellow onion, then peel and finely chop the garlic. Deseed and slice the red pepper, then cut the courgette into bite-size chunks. Chop the tomatoes.
  3. Heat the palm oil in a large frying pan over a medium heat. Add the onion with a pinch of the remaining salt and cook for 6 to 8 minutes until softened and lightly golden. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the red pepper and courgette, then cook for 5 minutes, stirring, until the vegetables start to soften. Stir in the tomatoes, ground cumin and chili flakes and cook for 2 minutes to bring the flavours together. Add a splash of water if it looks dry.
  5. Drain and rinse the canned chickpeas, then stir them into the pan. Pour in the coconut milk and bring to a gentle simmer, then cook for 10 to 12 minutes until the vegetables are tender and the sauce is lightly thickened. Season with the remaining fine sea salt to taste.
  6. Finely chop most of the fresh coriander, reserving a little to finish. Cut the lime in half and squeeze in half the juice, then taste and add more if you like it brighter. Fluff the rice, divide between bowls, spoon over the moqueca-style stew, and finish with the reserved coriander.

Recipe notes

Tips

  • Keep the stew at a gentle simmer once the coconut milk is added so it stays creamy rather than splitting.
  • For a fresher finish, add the lime juice off the heat and adjust gradually so it stays bright.
  • If serving to children or anyone sensitive to heat, start with a pinch of chili flakes and add more at the table.

Substitutions

  • Replace palm oil with olive oil for a cleaner, less distinctive flavour.
  • Replace chili flakes with a smaller amount of chili flakes for a milder bowl, or increase them for more heat.
  • Replace basmati rice with jasmine rice for a slightly stickier, more fragrant base.

Storage

  • Refrigerate up to 3 days
  • Cool the rice and stew quickly, then refrigerate in separate airtight containers. Reheat the stew gently in a saucepan until piping hot, adding a splash of water to loosen; reheat the rice with a tablespoon of water, covered, until steaming hot. Freeze the stew for up to 2 months; defrost overnight in the fridge before reheating.
