Moroccan Couscous Bowl with Roasted Vegetables and Chickpeas
Why this recipe works
- Built for meal prep: Keeping the tahini dressing, parsley and almonds separate protects the couscous from softening and preserves the fresh finish.
- Warm, savoury flavour: Cumin-roasted vegetables and chickpeas bring gentle spice and sweetness, while lemon-tahini dressing adds brightness and creaminess.
- Balanced textures: Fluffy couscous, tender roasted vegetables, creamy dressing and toasted almonds give the bowl a satisfying mix of soft, crisp and nutty elements.
- Simple cooking flow: The method is split between an easy tray roast, covered couscous and a whisked dressing, making it approachable for everyday cooking.

Make-ahead tips
- Keep the dressing separate: Pack the tahini dressing on its own and add it just before eating so the couscous stays light rather than clumping.
- Cool before sealing: Let the roasted vegetables and chickpeas cool briefly before closing the containers; trapped steam can soften the couscous.
- Finish with fresh toppings: Add parsley and toasted almonds at the last moment for the cleanest flavour and best crunch.
Ingredient notes
- Work the tahini smooth: Tahini can tighten when lemon juice is added; keep whisking and loosen it gradually with water until it becomes pourable.
- Adjust the spice profile: Ground cumin keeps the flavour simple and earthy, while ras el hanout gives the bowl a warmer, more aromatic profile.
- Toast the almonds: A brief toast in a dry pan deepens the flavour of the almonds and makes their crunch more noticeable.
Dietary alternatives
- For a gluten-free version: Replace the couscous with cooked quinoa, rice or another gluten-free grain, keeping the roasted vegetables, chickpeas and dressing the same.
- For a nut-free bowl: Omit the almonds or use toasted seeds for crunch, checking that all packaged ingredients are suitable.
Authenticity notes
- Moroccan-inspired rather than traditional: This bowl uses couscous, chickpeas and warm North African-style spicing in a practical meal-prep format, rather than following a traditional couscous service.

Instructions
- Heat the oven to 220°C (430°F). Cut the courgette, carrots and red pepper into bite-size pieces, then drain and rinse the chickpeas.
- Tip the vegetables and chickpeas onto a baking tray and toss with 2 tbsp extra virgin olive oil, the ground cumin, fine sea salt and black pepper. Roast for 20 to 25 minutes, turning once, until tender and browned at the edges.
- Meanwhile, put the couscous in a heatproof bowl. Bring 200 ml water to the boil, pour it over the couscous, cover, and leave for 5 minutes, then fluff with a fork.
- Toast the sliced almonds in a dry frying pan over a medium heat for 2 to 3 minutes, stirring, until lightly golden. Tip onto a plate to cool.
- Make the dressing by whisking the tahini with the juice of the lemon, 1 tbsp extra virgin olive oil and 60 ml water until smooth and pourable. If it tightens, whisk in a splash more water until it loosens again.
- Divide the couscous between two meal-prep containers and top with the roasted vegetables and chickpeas. Pack the dressing separately, then chop the fresh parsley and keep it with the toasted almonds to add just before eating.
Recipe notes
Tips
- For the best texture, let the roasted vegetables cool for 10 minutes before sealing the containers so steam does not soften the couscous.
- Tahini can seize when lemon is added; keep whisking and add the water gradually until the dressing turns smooth and creamy.
Substitutions
- Replace sliced almonds with pistachios for a different crunch.
- Replace ground cumin with ras el hanout for a more complex, aromatic spice profile.
Storage
- Refrigerate up to 4 days
- Keep the couscous and roasted vegetables in sealed containers in the fridge, with the tahini dressing packed separately. Add the fresh parsley and sliced almonds just before serving; eat cold or bring to room temperature for 15 minutes.
