Levant-Style Lamb Stew with Chickpeas, Tomatoes and Lemon
Why this recipe works
- Deep savoury base: Browning the lamb first builds flavour in the pot before the onions, garlic, cumin and cinnamon form the aromatic foundation.
- Rich but balanced: Tomatoes and chickpeas make the stew hearty, while lemon juice added at the end lifts the sauce so it does not feel heavy.
- Improves with resting: The sauce continues to develop after chilling, making this a strong option for cooking a day ahead or freezing in portions.

Common mistakes
- Do not crowd the lamb: Brown the lamb in batches so it takes on colour rather than steaming in its own juices.
- Keep the simmer gentle: A steady low simmer helps lamb shoulder soften gradually; vigorous boiling can make the meat tighten before it becomes tender.
Make-ahead tips
- Good the next day: The stew’s flavour deepens after a night in the fridge, so it is well suited to cooking ahead.
- Reheat gently: Warm it slowly on the hob with a splash of water if the sauce has thickened, until piping hot throughout.
- Freezes well: Cool completely before freezing, then defrost overnight in the fridge before reheating.
Serving ideas
- Serve with grains or bread: Rice, couscous or warm flatbread all work well for soaking up the tomato-rich sauce.
- Finish fresh: Extra parsley and a little more lemon at the table sharpen the richness of the lamb.
Authenticity notes
- Levant-style flavour profile: The combination of lamb, chickpeas, tomatoes, cumin, cinnamon, lemon and herbs reflects a broad Levant-inspired approach rather than one single named regional stew.

Ingredients
Instructions
- Finely chop the onion. Cut the lamb into bite-sized pieces, then season with 1 tsp of the fine sea salt and the black pepper.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the lamb in batches for 6 to 8 minutes total, turning until well coloured, then transfer to a plate.
- Reduce the heat to medium and add the onion to the pot with a pinch of the remaining salt. Cook for 6 to 8 minutes, stirring, until softened and lightly golden.
- Crush the garlic and stir it in for 30 seconds until fragrant. Add the ground cumin and ground cinnamon and cook for 30 seconds, stirring constantly.
- Return the lamb to the pot and add the canned chopped tomatoes. Fill one of the tomato cans halfway with water, swirl, and add it to the pot; bring to a gentle simmer.
- Cover and simmer on low for 60 minutes, stirring occasionally, until the lamb is starting to turn tender. If the stew looks dry at any point, add a splash of water to keep it saucy.
- Drain and rinse the canned chickpeas, then stir them into the stew with the remaining fine sea salt. Simmer uncovered for 10 to 15 minutes until the lamb is very tender and the sauce is rich and slightly thickened.
- Finely chop the fresh parsley. Squeeze in the lemon juice, stir through most of the parsley, and taste for seasoning; serve topped with the remaining parsley.
Recipe notes
Tips
- Brown the lamb in batches so it sears rather than steams; this builds a deeper, richer sauce.
- Keep the simmer gentle and steady; fast boiling can make lamb shoulder tighten before it becomes tender.
- If serving vulnerable groups, ensure the stew is simmered until the lamb is fully cooked and piping hot throughout.
Substitutions
- Replace Fresh parsley with Fresh coriander for a more citrusy herbal finish.
- Replace Lemon with Lime for a sharper, more aromatic acidity.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob with a splash of water until piping hot; the flavour improves after a day. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
