Spiced Yoghurt Chicken Bowl with Flatbread and Salad
Why this recipe works
- Balanced spicing: Cumin, paprika, garlic and lemon give the chicken warmth and savoury depth without overwhelming the fresh salad.
- Tender yoghurt marinade: Greek yoghurt coats the chicken and helps it cook up juicy, with a lightly tangy finish.
- Built for easy serving: Torn pita, salad and sliced chicken turn the dish into a complete bowl while keeping the components easy to adjust.

Timing notes
- Short marinade: The chicken only needs a brief room-temperature marinade while the salad is prepared, making the recipe practical for a quick meal.
- Assemble just before eating: Add the pita, salad, chicken and yoghurt at the end so the bread stays pleasantly soft rather than turning soggy.
Texture tips
- Keep the chicken juicy: Chicken thighs are forgiving, but they still benefit from steady medium-high heat and being sliced after cooking rather than before.
- Encourage browning: Let excess marinade drip off before the chicken goes into the pan so it sears instead of steaming.
Ingredient swaps
- Use chicken breast: Chicken breast cutlets can replace thighs, but they cook faster and should be watched closely to avoid drying out.
- Change the paprika: Smoked paprika gives the marinade a deeper, more charred flavour while keeping the heat level mild.
- Swap the herbs: Parsley can replace mint for a cleaner, more herbaceous finish.
Make-ahead tips
- Store in parts: Keep the cooked chicken, salad, pita and reserved yoghurt separate in the fridge so each component holds its texture.
- Reheat gently: Warm the chicken in a frying pan over medium heat until piping hot, then assemble the bowls just before serving.

Instructions
- In a bowl, mix most of the yogurt with the garlic, zest and juice of the lemon, ground cumin, sweet paprika, black pepper and fine sea salt. Reserve the remaining yogurt for drizzling at the end.
- Add the chicken thighs to the spiced yogurt and turn to coat well. Cover and marinate for 15 minutes at room temperature while you prep the salad.
- Cut the cucumber into small chunks, halve the cherry tomatoes, and thinly slice the red onion. Roughly tear the mint leaves.
- Heat the olive oil in a large frying pan over a medium-high heat. Lift the chicken from the marinade, letting excess drip back into the bowl, then cook for 4 to 6 minutes per side until nicely browned and cooked through.
- Warm the pita bread in a dry pan or directly over a low flame for 30 to 60 seconds per side, then tear into bite-sized pieces. Divide the pita between two bowls and top with the cucumber, cherry tomatoes and red onion.
- Slice the chicken and pile it over the bowls. Drizzle with the reserved yogurt, scatter over the fresh mint, and finish with a squeeze of any remaining lemon juice if you like.
Recipe notes
Tips
- For the best texture, let the pan get properly hot before adding the chicken so it browns rather than steams.
- If you are serving anyone vulnerable, make sure the chicken is cooked until piping hot all the way through with no pink remaining.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets; reduce the cooking time slightly to keep them juicy.
- Replace Sweet paprika with Smoked paprika for a deeper, smokier flavour.
- Replace Fresh mint with Fresh parsley for a more herbaceous, less menthol finish.
Storage
- Refrigerate up to 2 days
- Store the cooked chicken and salad separately from the pita and yogurt. Reheat the chicken in a frying pan over a medium heat until piping hot, and assemble just before serving so the pita stays tender rather than soggy.
