Spaghetti alla Nerano (Courgette Pasta with Provolone and Basil)

Few courgette pastas are as quietly luxurious as spaghetti alla Nerano, a Campanian dish associated with the Amalfi Coast village of Nerano. Thinly sliced courgettes are fried until golden, giving them a sweet, savoury depth that carries through the whole plate. The sauce comes not from cream but from the emulsion of courgette-scented olive oil, starchy pasta water, provolone and Parmesan, which coats the spaghetti in a glossy, lightly stretchy finish. Fresh basil and black pepper keep it fragrant and lively. It is best served immediately, while the cheese is smooth and the pasta is silky.

Why this recipe works

  • Classic courgette preparation: Frying the courgettes until deeply golden concentrates their sweetness and gives the dish its recognisable savoury depth.
  • Creamy without cream: Hot pasta water, courgette-infused oil and grated cheese emulsify into a smooth sauce that clings to the spaghetti.
  • Simple but layered: Provolone adds savoury stretch, Parmesan brings saltiness, and fresh basil lifts the richness at the end.

Authenticity notes

  • Campanian style: The dish is closely associated with Nerano on the Sorrento Peninsula, where fried courgettes and cheese are used to create a rich pasta sauce without cream.
  • Role of the cheese: Provolone gives the sauce its distinctive savoury stretch; using only Parmesan makes the result sharper and less elastic.

Timing notes

  • Serve immediately: Once the sauce is glossy and coating the spaghetti, serve at once; the cheese sauce tightens as it sits.
  • Frying takes the time: Most of the active work is batch-frying the courgettes. The final tossing stage should be quick and focused.

Common mistakes

  • Pale courgettes: Stopping before the courgettes are properly golden leaves the pasta tasting flat rather than sweet and savoury.
  • Melting cheese over heat: Add the cheeses off the heat and use hot pasta water to melt them gently, which helps prevent stringiness or splitting.
  • Loosening too quickly: Add pasta water gradually while tossing so the sauce becomes glossy rather than watery.

  1. Slice the courgettes into thin rounds, about 2 to 3 mm thick. Grate the provolone and Parmesan, and pick the basil leaves. Set a large pot of water on to boil.
  2. Heat the olive oil in a large frying pan over medium-high heat. Fry the courgettes in batches until deeply golden, 3 to 5 minutes per batch, then lift out and season lightly with some of the salt. Keep the oil in the pan.
  3. Salt the boiling water with the remaining salt and cook the spaghetti until just shy of al dente. Reserve about 250 ml of the pasta water, then drain. Keep the pot nearby in case you need extra hot water to loosen the sauce.
  4. Return the frying pan to low heat and add the drained spaghetti. Add a splash of reserved pasta water and toss well to start an emulsion with the courgette oil. Add most of the fried courgettes and toss until the pasta looks glossy.
  5. Take the pan off the heat and add the provolone and Parmesan, tossing vigorously and adding pasta water a little at a time until the cheeses melt into a smooth, creamy sauce that coats the spaghetti. Tear in most of the basil and add the black pepper, then toss again. Serve immediately, topped with the remaining courgettes and basil.

Recipe notes

Tips

  • Fry the courgettes until properly golden; that deeper colour is what gives the dish its signature flavour.
  • When adding the cheeses, keep the pan off the heat and use hot pasta water to melt them gently, so the sauce stays glossy rather than stringy.
  • If serving anyone who is vulnerable to foodborne illness, make sure the pasta is served piping hot and avoid holding it warm for long periods.

Substitutions

  • Replace Provolone cheese with Parmesan for a sharper, less stretchy sauce.
  • Replace Extra virgin olive oil with Olive oil for a milder flavour.

Storage

  • Refrigerate up to 2 days
  • Cool quickly and refrigerate in a sealed container. Reheat gently in a frying pan with a splash of water, tossing until piping hot; avoid high heat, which can make the cheese sauce split.
