Slow-Cooked Pulled Pork with Vinegar Slaw
Why this recipe works
- Rich but balanced: Slow-cooked pork shoulder delivers deep savoury flavour, while the vinegar slaw cuts through the richness.
- Good for planning ahead: The pork reheats well with its cooking juices, making it useful for batch cooking or relaxed entertaining.
- Simple technique: After a quick sear, the slow cooker does most of the work and the meat is ready when it pulls apart easily.

Timing notes
- Mostly hands-off: The active work is mainly seasoning, searing and preparing the slaw; the long cooking time is largely unattended.
- Check for tenderness: Slow cookers vary, so begin checking towards the end of cooking. The pork should shred easily with little resistance.
- Rest before shredding: A short rest after cooking makes the pork easier to handle and helps it shred more cleanly while still warm.
Texture tips
- Keep the pork moist: Return the shredded meat to the slow cooker and turn it through the cooking juices before serving.
- Protect the slaw crunch: Store the slaw separately from the pork and dress it close enough to serving that the cabbage keeps some bite.
Make-ahead tips
- Cook ahead: Pulled pork is well suited to batch cooking. Cool it quickly, store it with some cooking juices, and reheat until piping hot.
- Freeze the pork, not the slaw: The cooked pork freezes well, but the vinegar slaw is best made fresh or kept chilled for short-term use.
- Keep components separate: Store the pork and slaw in separate containers so the meat stays juicy and the vegetables stay crisp.
Ingredient notes
- Why pork shoulder works: Pork shoulder has enough connective tissue and fat to become tender during long, gentle cooking.
- Tune the slaw: For a sharper slaw, add a little more vinegar just before serving and adjust the seasoning to taste.
- Smoked paprika matters: Smoked paprika gives the pork its barbecue-style depth without needing a smoker.

Instructions
- Rub the pork all over with the smoked paprika, ground cumin, fine sea salt and black pepper. Peel and finely grate the garlic, then rub it into the meat.
- Heat 1 tbsp sunflower oil in a frying pan over a medium-high heat. Sear the pork for 2 to 3 minutes per side until well browned, then transfer to the slow cooker.
- Cover and slow-cook on low for 8 hours, until the pork is very tender and pulls apart easily. If your slow cooker runs hot, start checking at 7 hours.
- Thinly slice the cabbage and peel and grate the carrot into a mixing bowl. In a small bowl, whisk the white wine vinegar with the caster sugar, Dijon mustard and 2 tbsp sunflower oil until the sugar dissolves.
- Pour the dressing over the cabbage and carrot, then toss well and set aside for 15 minutes to lightly soften. Taste and adjust with a pinch more fine sea salt and black pepper if needed.
- Lift the pork onto a board and shred with two forks, discarding any large pieces of fat. Return the meat to the slow cooker and turn it through the cooking juices so it stays moist.
- Pile the pulled pork onto plates and serve with the vinegar slaw on the side. Spoon a little of the juices over the pork just before serving.
Recipe notes
Tips
- For cleaner shredding, let the pork rest for 10 minutes after cooking, then pull it apart while still warm.
- If you prefer a sharper slaw, add an extra 1 tbsp white wine vinegar and toss again just before serving.
- Food safety: if serving vulnerable groups, ensure the pork is cooked until piping hot throughout before shredding.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a coarser, more textured slaw dressing.
- Replace sunflower oil with olive oil for a fruitier dressing.
Storage
- Refrigerate up to 3 days
- Cool the pulled pork quickly, then refrigerate in a sealed container with a little of the cooking juices. Reheat in a saucepan over a low heat, stirring, until piping hot; add a splash of water if it looks dry. Store the slaw separately and eat within 2 days for best crunch.
