Vegetarian Paella with Artichokes and Butter Beans
Why this recipe works
- Saffron-led depth: Infusing the hot stock with saffron before cooking lets the rice absorb its colour and aroma evenly.
- Toasted rice base: Leaving the rice undisturbed helps it cook evenly and encourages the lightly crisp base associated with paella.
- Hearty vegetarian serving: Artichokes, butter beans and roasted peppers add substance, colour and savoury contrast without needing meat or seafood.

Texture tips
- Encourage the toasted base: Once most of the liquid has absorbed, briefly raising the heat helps the bottom layer toast; listen for a gentle crackle rather than letting it scorch.
- Avoid stirring the rice: After the stock is added, leave the rice mostly undisturbed so the grains stay separate and the base can form.
Ingredient notes
- Use paella rice: Short-grain paella rice is best because it absorbs stock while keeping a slight bite; long-grain rice will give a different texture.
- Keep the stock hot: Hot stock helps the rice cook steadily from the start and supports more even absorption across the pan.
- Check the stock first: Vegetable stocks vary widely in saltiness, so season cautiously and finish with lemon if the dish needs brightness.
Authenticity notes
- Pan-cooked rice method: Paella is shaped by the shallow-pan cooking technique: rice absorbs the stock in an even layer rather than being stirred like risotto.
- Vegetarian interpretation: Artichokes, beans and peppers make this a vegetable-led version while preserving the saffron rice, wide-pan cooking and lemon-at-the-table serving style.
Make-ahead tips
- Prepare the vegetables ahead: The onion, garlic, peppers, artichokes and beans can be prepped before cooking so the paella comes together smoothly.
- Reheat gently: Reheat leftovers in a frying pan with a splash of vegetable stock, covered, until piping hot throughout, then finish with lemon.

Instructions
- Warm the vegetable stock in a saucepan until steaming, then stir in the saffron and take off the heat to infuse. Keep it hot while you start the paella.
- Peel and finely chop the onion, then peel and finely chop the garlic. Drain the artichoke hearts, butter beans and roasted red peppers; cut the peppers into strips and halve any large artichoke hearts.
- Heat the olive oil in a paella pan (or large frying pan) over a medium heat. Cook the onion with a pinch of the salt for 6 to 8 minutes until soft and lightly golden, then stir in the garlic for 1 minute.
- Stir in the sweet paprika for 30 seconds, then add the paella rice and stir to coat in the oil. Pour in about 800 ml of the hot saffron stock and season with the remaining salt and the black pepper.
- Bring to a lively simmer, then reduce to a steady simmer and cook for 10 minutes without stirring. Rotate the pan occasionally for even cooking, and top up with a splash of the remaining stock if the rice looks dry at the edges.
- Scatter over the artichoke hearts, butter beans and roasted red peppers, pressing them lightly into the rice. Cook for 8 to 10 minutes until the rice is tender with a slight bite and most of the liquid has been absorbed.
- Increase the heat to medium-high for 1 to 2 minutes to encourage a toasted base, listening for a gentle crackle, then remove from the heat. Cover and rest for 5 minutes.
- Cut the lemon into wedges. Serve the paella straight from the pan with lemon wedges for squeezing over.
Recipe notes
Tips
- For the best texture, avoid stirring once the stock goes in; this helps the rice cook evenly and encourages a toasted base.
- If your stock is very salty, reduce the fine sea salt slightly and adjust at the table with lemon instead.
- If serving anyone who is vulnerable, make sure the paella is piping hot throughout before serving.
Substitutions
- Replace sweet paprika with smoked paprika for a deeper, smokier flavour.
- Replace canned roasted red peppers with red pepper, roasted until tender and peeled.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container. Reheat with a splash of vegetable stock in a frying pan over a medium heat, covered, until piping hot; add a squeeze of lemon to brighten before serving.
