Flautas de Pollo con Crema (Crispy Chicken Flautas with Crema and Salsa)
Why this recipe works
- Crisp shell: Brief frying gives the rolled corn tortillas a deep golden crunch while keeping the chicken filling tender.
- Fresh balance: Tomato salsa and lime cut through the richness of the fried tortillas and crema.
- Seasoned filling: Simmering the chicken with onion, garlic, cumin and ancho chilli powder builds flavour before the tortillas are filled.

Adjust the heat
- Make it milder: Remove the jalapeño seeds and white pith, or replace some of the jalapeño with extra tomato.
- Add more heat: Keep the jalapeño seeds in the salsa, or add a little extra chopped chilli to taste.
- Keep the heat balanced: Use enough lime and crema so the salsa tastes bright rather than harsh.
Texture tips
- Serve immediately: Add crema, salsa and lettuce just before serving so the fried tortillas stay crisp.
- Fry in batches: Avoid crowding the pan; steady heat helps the flautas crisp quickly instead of absorbing oil.
- Keep the chicken tender: Simmer the chicken only until cooked through, then shred once cool enough to handle.
Make-ahead tips
- Prepare components ahead: The chicken can be cooked and shredded in advance, and the salsa can be mixed ahead and kept chilled.
- Store separately: Keep flautas, salsa, lettuce and crema separate in the fridge to preserve texture.
- Reheat for crispness: Reheat flautas on a baking tray at 200°C (390°F) until piping hot and crisp, then add the cold toppings.
Common mistakes
- Rolling cold tortillas: Cold corn tortillas can crack, so warm them well and keep them covered while filling.
- Overfilling the pan: Too many flautas at once lowers the oil temperature and makes them heavier rather than crisp.
- Topping too early: Crema and salsa soften the tortillas, so finish the flautas only when ready to eat.

Ingredients
Instructions
- Put the chicken in a large pot and cover with water. Add half the onion (leave the rest for the salsa), 1 garlic clove, the cumin, ancho chilli powder and 1 tsp of the salt. Bring to the boil, then simmer for 12 to 15 minutes until the chicken is cooked through.
- Lift the chicken out to a bowl and leave until cool enough to handle, then shred it with two forks. Taste and season with a pinch more salt if needed. Keep the cooking liquid in the pot for warming the tortillas.
- Make the salsa: finely dice the tomatoes and the remaining onion, then finely chop the jalapeno and the remaining garlic clove. Stir in the juice of half the lime, most of the coriander (reserve a little to finish), and the remaining salt. Set aside so the flavours mingle.
- Warm the tortillas so they roll without cracking: dip each tortilla briefly in the hot cooking liquid, then stack and cover to keep warm. Spoon a line of shredded chicken down the centre of each tortilla and roll up tightly. Place seam-side down while you roll the rest.
- Heat the vegetable oil in a frying pan over medium-high heat until a small piece of tortilla sizzles immediately. Fry the flautas in batches, seam-side down first, turning with tongs, for 2 to 3 minutes total until deep golden and crisp. Drain briefly on a plate and repeat with the remaining flautas.
- Serve the flautas hot, topped with Mexican crema, tomato salsa and shredded iceberg lettuce. Finish with the remaining coriander and squeeze over the remaining lime juice to taste. Eat straight away while crisp.
Recipe notes
Tips
- If your tortillas crack as you roll, warm them a little longer in the hot cooking liquid and keep them covered so they stay pliable.
- For a milder salsa, remove the jalapeno seeds and white pith before chopping.
- Fry in small batches so the oil temperature stays steady and the flautas crisp rather than absorb oil.
Substitutions
- Replace Mexican crema with sour cream for a slightly thicker, tangier topping.
- Replace chicken thighs with chicken breast for a leaner filling; simmer until just cooked through so it stays juicy.
- Replace jalapeno pepper with a smaller amount of tomato for a non-spicy salsa.
Storage
- Refrigerate up to 2 days
- Store flautas, salsa and lettuce separately in the fridge. Reheat flautas on a baking tray at 200°C (390°F) for 8 to 10 minutes until piping hot and crisp; add crema, salsa and lettuce after reheating.
