Poulet Rôti à l’Estragon (Roast Chicken with Tarragon)

Poulet rôti à l’estragon is a French-style roast chicken where the familiar comfort of crisp skin and tender meat is lifted by the clean, lightly aniseed character of fresh tarragon. The herb is worked into softened butter with garlic, so it seasons the bird from under the skin as it roasts, while lemon in the cavity and white wine in the pan keep the finished juices bright rather than heavy. It is the kind of roast that feels refined without being complicated: generous enough for Sunday lunch, but simple enough for a relaxed dinner with potatoes, greens or a crisp salad alongside.

Why this recipe works

  • Herb butter seasons deeply: Spreading the garlic and tarragon butter under the skin seasons the meat directly while enriching the roasting juices.
  • Crisp skin, juicy meat: Drying the chicken well and roasting at 200°C (390°F) encourages good browning before the meat dries out.
  • Bright pan sauce: Lemon and dry white wine lift the richness of the butter and roast chicken, creating a simple sauce from the browned pan juices.

Timing notes

  • Rest before carving: Let the chicken rest for 10 minutes so the juices settle and the meat carves more cleanly.
  • Serve soon after resting: The chicken is at its best once carved and sauced while the skin is still crisp and the pan juices are hot.
  • Mostly hands-off: The active work is mainly making the tarragon butter and finishing the pan sauce; most of the time is oven roasting.

Texture tips

  • For crisper skin: Leave the chicken uncovered in the fridge for a few hours if time allows, then pat it dry again before seasoning.
  • Keep the meat succulent: Tucking butter under the skin helps protect the breast and thighs as they roast, while also carrying the tarragon flavour into the meat.
  • Use the thigh as your guide: Check the thickest part of the thigh and remove the chicken once it reaches 74°C (165°F).

Ingredient notes

  • Use fresh tarragon: Fresh tarragon gives the dish its distinctive sweet aniseed note; dried herbs will taste flatter here.
  • Balance the pan juices: The lemon and wine should brighten the sauce without making it sharp, so simmer briefly and adjust the seasoning to taste.
  • Thyme changes the character: Fresh thyme works as a substitute, but it gives a softer floral flavour rather than the classic tarragon profile.

Make-ahead tips

  • Make the butter ahead: The garlic and tarragon butter can be mixed in advance and chilled; let it soften before spreading under the skin.
  • Reheat gently: Warm carved leftovers with a spoonful of pan juices in a 180°C (355°F) oven until piping hot.
  • Freeze in portions: Cool cooked chicken quickly, freeze in portions with a little pan juice, then defrost overnight in the fridge before reheating.

  1. Heat the oven to 200°C (390°F). Pat the chicken dry, then set it in a roasting pan.
  2. Finely chop the garlic and most of the tarragon, reserving a small handful of tarragon leaves for finishing. In a bowl, mash the butter with the garlic, chopped tarragon, salt and pepper until well combined.
  3. Carefully loosen the skin over the breast and thighs with your fingers, then spread about two-thirds of the tarragon butter underneath the skin. Rub the remaining butter over the outside of the chicken, then drizzle with the olive oil.
  4. Halve the lemon and place it in the cavity. Roast for 60 to 70 minutes, basting once or twice, until the skin is deep golden and the thickest part of the thigh reaches 74°C (165°F).
  5. Transfer the chicken to a board and rest for 10 minutes. Spoon off excess fat from the roasting pan if needed, then place the pan over a medium heat and add the white wine, scraping up the browned bits; simmer for 2 to 3 minutes until slightly reduced.
  6. Carve the chicken and spoon the lemon and white wine pan juices over the top. Finish with the reserved tarragon leaves and serve straight away.

Recipe notes

Tips

  • For extra-crisp skin, leave the chicken uncovered in the fridge for a few hours before roasting, then pat dry again just before seasoning.
  • If the skin is browning too quickly, turn the oven down to 180°C (355°F) for the final 15 to 20 minutes.
  • If serving anyone vulnerable, ensure the chicken is cooked until the thigh reaches 74°C (165°F) and the juices run clear.

Substitutions

  • Replace Fresh tarragon with Fresh thyme for a more floral, less aniseed finish.
  • Replace Dry White Wine with water for an alcohol-free pan juice, and simmer a little longer to concentrate the flavour.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Reheat carved chicken with a spoonful of pan juices in a 180°C (355°F) oven until piping hot; freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
