Goan Fish Curry (Xitti Kodi)

Known in Goa as Xitti Kodi, this fish curry brings together the region’s familiar pairing of coconut, tamarind and warm spices in a sauce that is tangy, gently creamy and aromatic rather than heavy. White fish is kept in generous pieces and simmered only until just opaque, so it stays tender in the smooth tomato-coconut gravy. Mustard seeds, dried chilli and fresh curry leaves add fragrance and a savoury edge, while tamarind gives the curry its clean, appetising sharpness. Serve it simply with steamed rice, which soaks up the light sauce without overpowering the delicate fish.

Why this recipe works

  • Bright, balanced sauce: Tamarind cuts through the richness of full-fat coconut milk, keeping the curry tangy rather than heavy.
  • Built-in depth: Mustard seeds, curry leaves, chilli, onion, tomato and ground spices are cooked before blending, giving the sauce a rounded savoury base.
  • Gentle fish cooking: The fish is added only after the sauce is smooth and simmering, so it stays tender and flakes cleanly.

Adjust the heat

  • For a milder curry: Reduce the dried chilli and remove it before blending if you want warmth without noticeable heat.
  • For more heat: Add extra green chilli or use a hotter dried chilli, keeping the coconut and tamarind balance unchanged.

Ingredient notes

  • Choose firm white fish: Cod or similar firm white fish works well because it holds its shape better in the sauce.
  • Balance the tamarind: Tamarind paste varies in sharpness, so taste the sauce before adding the fish and adjust seasoning if needed.
  • Use full-fat coconut milk: Full-fat coconut milk gives the curry body and helps soften the tang of the tamarind.

Texture tips

  • Keep the fish tender: Once the fish is in the pan, maintain a gentle simmer; boiling can make the pieces break apart and turn dry.
  • Blend until smooth: A thorough blend gives the curry its light, silky consistency and helps the spices distribute evenly.

Make-ahead tips

  • Make the sauce ahead: The curry base can be cooked and blended in advance, then reheated gently before adding the fish.
  • Reheat carefully: Warm leftovers over low heat until piping hot, stirring gently so the fish stays in pieces.

  1. Thinly slice the onion. Roughly chop the tomatoes, and roughly chop the ginger and garlic. Cut the fish into large bite-sized pieces and season with a pinch of the fine sea salt.
  2. Heat the coconut oil in a saucepan over medium heat. Add the mustard seeds and cook for 30 to 60 seconds until they start to pop, then add the dried red chilli and half the curry leaves and cook for 30 seconds until fragrant.
  3. Add the onion with a pinch of the fine sea salt and cook for 6 to 8 minutes, stirring, until softened and lightly golden. Stir in the ginger and garlic and cook for 1 minute.
  4. Add the tomatoes, ground coriander, ground cumin and ground turmeric. Cook for 6 to 8 minutes, stirring, until the tomatoes break down and the mixture looks jammy and the oil starts to separate at the edges.
  5. Scrape the tomato mixture into a blender and add the coconut milk, tamarind paste and water. Blend until smooth, then return to the saucepan and bring to a gentle simmer over medium-low heat.
  6. Taste and season with the remaining fine sea salt, keeping the curry at a gentle simmer. Slide in the fish and cook for 5 to 7 minutes, turning once, until just opaque and flaking. Stir in the remaining curry leaves for the last minute, then take off the heat and rest for 2 minutes before serving.

Serving suggestions

This recipe pairs well with:

Steamed rice

Tips

  • Keep the curry at a gentle simmer once the fish goes in; a hard boil can break the pieces apart.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the fish is cooked until fully opaque and flakes easily all the way through.

Substitutions

  • Replace White fish fillet with Cod fillet for a firmer, chunkier curry.
  • Replace Coconut oil with Extra-virgin olive oil for a lighter flavour.
  • Replace Tamarind paste with Apple-cider-vinegar for a sharper, less fruity tang.

Storage

  • Refrigerate up to 2 days
  • Cool, then refrigerate in a sealed container for up to 2 days. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the fish stays in pieces; add a splash of water if it thickens.
