Poulet Rôti (Garlic and Herb Roast Chicken)
Why this recipe works
- Aromatic herb butter: Garlic, thyme and rosemary are worked into softened butter, then spread under and over the skin for flavour throughout the meat and surface.
- Bright pan juices: Lemon and dry white wine cut through the richness of the chicken and butter, giving the sauce a clean, savoury finish.
- Classic roast texture: A hot oven gives the skin deep colour while resting helps the carved chicken stay succulent.

Timing notes
- Rest before carving: Let the chicken rest for 10 minutes after roasting so the juices settle before slicing.
- Best served warm: Carve once rested and serve with the reduced pan juices while the skin is still crisp and the sauce is glossy.
Texture tips
- For crisper skin: Pat the chicken thoroughly dry before adding the herb butter and seasoning; excess moisture will soften the skin as it roasts.
- Keep the breast moist: If the skin colours too quickly, loosely cover the breast area with foil for the final part of roasting.
Ingredient notes
- Use dry white wine: A dry white wine keeps the pan juices savoury and balanced rather than sweet.
- Fresh herbs matter here: Fresh thyme and rosemary give the butter a cleaner, more aromatic flavour than dried herbs.
Make-ahead tips
- Prepare the aromatics ahead: The garlic, herbs, shallots and lemon can be prepared in advance, then assembled with the chicken before roasting.
- Reheat gently: Warm carved leftovers with a little pan juice in a 180°C (355°F) oven until piping hot to help prevent the meat drying out.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Pat the chicken dry with kitchen paper and set it in a roasting pan.
- Finely chop 4 garlic cloves and strip the leaves from the thyme and rosemary. Mash the chopped garlic and herbs into the butter with 1 tsp fine sea salt and the black pepper to make a fragrant herb butter.
- Gently loosen the skin over the breast with your fingers and push about two thirds of the herb butter underneath, spreading it as evenly as you can. Rub the remaining butter all over the skin, then season the outside with the remaining 1 tsp fine sea salt.
- Peel and halve the shallots, then halve the lemon. Put the shallots, lemon halves, remaining 2 garlic cloves and any leftover herb sprigs into the roasting pan around the chicken.
- Pour the white wine into the roasting pan and roast for 1 hour 10 minutes to 1 hour 20 minutes, basting once or twice, until the skin is deeply golden and the juices run clear when the thickest part of the thigh is pierced. If the skin colours too quickly, loosely cover the breast area with foil for the final part of roasting.
- Transfer the chicken to a board and rest for 10 minutes before carving. Tip the roasting juices into a saucepan, squeeze in the roasted lemon, then simmer for 2 to 3 minutes to lightly reduce; taste and adjust seasoning if needed.
Recipe notes
Tips
- For extra-crisp skin, make sure the chicken is very dry before adding the butter and seasoning.
- If you have a thermometer, aim for 75°C (165°F) in the thickest part of the thigh, avoiding the bone.
- Alcohol note: the wine reduces in the pan sauce, but if serving children, simmer the juices for a full 5 minutes to drive off more alcohol.
Substitutions
- Replace Butter with Ghee for a slightly nuttier flavour and a higher smoke point.
- Replace Shallot with Yellow onion for a more robust, less sweet base to the pan juices.
- Replace Fresh rosemary with Fresh thyme for a softer, more delicate herb profile.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat carved chicken with a splash of the pan juices in a 180°C (355°F) oven until piping hot; freeze carved meat (with a little sauce) for best moisture.
