Mujaddara (Lentils and Rice with Caramelised Onions)
Why this recipe works
- Deep savoury flavour: Slow-cooked onions add sweetness and depth to the earthy lentils, rice and warm spices.
- Distinct textures: The lentils are cooked just until tender so they hold their shape, while the rice steams covered for a lighter finish.
- Bright finish: Lemon and seasoned yoghurt cut through the richness of the olive oil and caramelised onions.

Timing notes
- Let the rice steam: Keep the pot covered off the heat before fluffing; this helps the rice finish cooking gently and stay separate.
- Cook the onions alongside: Start the onions first, then cook the lentils and rice while they caramelise to keep the total time efficient.
Texture tips
- Keep the lentils intact: Simmer the lentils only until just tender before adding the rice, so they do not collapse into the grains.
- Rinse the rice well: Rinsing away excess starch helps the basmati cook up lighter rather than sticky.
Make-ahead tips
- Store the toppings apart: Keep the lentils and rice, onions, yoghurt and lemon separate so the onions keep their flavour and the yoghurt stays fresh.
- Reheat gently: Warm the lentils and rice with a splash of water over low heat until piping hot, then add the onions and yoghurt when serving.
- Freeze without the yoghurt: The lentil and rice mixture freezes well; add fresh lemon and yoghurt after reheating for the best finish.
Authenticity notes
- A humble staple: Mujaddara is known across Middle Eastern cooking as a simple lentil, rice and onion dish built from inexpensive pantry ingredients.
- Serve with something sharp: Lemon and yoghurt are classic partners because their acidity balances the sweet onions and earthy lentils.

Ingredients
Instructions
- Thinly slice the onion. Heat 4 tbsp of the olive oil in a large frying pan over medium heat, add the onion with a pinch of the salt, and cook for 25 to 30 minutes, stirring often, until deeply golden and caramelised. If it starts to catch, lower the heat and add a splash of water from the kettle to loosen the pan.
- Meanwhile, rinse the lentils in a sieve. Bring the vegetable stock to a simmer in a large pot, add the lentils, and cook for 12 minutes until they are just tender but still hold their shape. Keep the pot at a gentle simmer.
- Rinse the basmati rice until the water runs mostly clear, then stir it into the pot with the cumin, coriander, 1.5 tsp of the salt, and the pepper. Cover and cook on low for 12 minutes, then take off the heat and leave, covered, for 10 minutes to steam. Fluff gently with a spoon.
- Stir the remaining 1 tbsp olive oil into the yogurt and season it with a small pinch of salt and a squeeze of lemon juice. Taste and adjust with more lemon juice for a sharper topping. Cut the remaining lemon into wedges.
- Spoon the lentils and rice into bowls and pile the caramelised onions on top. Serve with the lemon wedges and the yogurt alongside. Finish with a little extra black pepper if you like.
Recipe notes
Tips
- For the best onions, keep the heat medium to medium-low and stir regularly; they should turn deep golden and sweet, not burnt.
- If you have time, rest the cooked pot for the full 10 minutes before fluffing; it helps the rice finish steaming and stay separate.
- If serving anyone vulnerable, use pasteurised yogurt.
Substitutions
- Replace Vegetable stock with water for a simpler, lighter result; season carefully with Fine sea salt to taste.
- Replace Yogurt with Greek yogurt for a thicker, tangier topping.
Storage
- Refrigerate up to 3 days
- Cool quickly and refrigerate the lentils and rice and the onions separately if possible. Reheat in a saucepan with a splash of water, covered, over low heat until piping hot; warm the onions in a frying pan with a little olive oil. Freeze the lentils and rice for up to 2 months; add the yogurt and lemon fresh when serving.
