Carne con Tomate (Andalusian Pork in Tomato Sauce)
Why this recipe works
- Deep savoury base: Browning the pork first creates caramelised flavour that carries through the tomato sauce.
- Tender, saucy finish: A low simmer gives pork shoulder time to soften while the sauce thickens around the meat.
- Simple ingredients, strong result: Ripe tomato, olive oil, garlic and sweet paprika provide most of the dish’s character without a long ingredient list.

Authenticity notes
- Andalusian style: Carne con tomate is commonly served in southern Spain as a homely main dish or tapas-style portion with bread for the sauce.
- Best served simply: Crusty bread and boiled potatoes suit the dish because they soak up the reduced tomato sauce without competing with it.
Ingredient notes
- Use ripe tomatoes: Very ripe tomatoes give the sauce better sweetness and body; grating them keeps the pulp while leaving the skins behind.
- Watch the paprika: Sweet paprika adds warmth and colour, but it can turn bitter if scorched, so stir it briefly before adding the tomato.
Common mistakes
- Do not crowd the pork: Brown the meat in batches so it sears rather than steams; this gives the finished sauce more depth.
- Keep the simmer gentle: A steady low simmer helps pork shoulder become tender without toughening or drying at the edges.
- Reduce the sauce at the end: Remove the lid only once the pork is tender so the sauce can thicken to a spoonable texture.
Make-ahead tips
- Good for making ahead: The stew holds well in the fridge and the sauce becomes even more settled after resting.
- Reheat gently: Warm it slowly in a saucepan with a little stock if the sauce has thickened too much, until piping hot throughout.
- Freezes well: Cool completely before freezing, then defrost in the fridge overnight before reheating.

Ingredients
Instructions
- Cut the pork into bite-sized chunks. Season with the salt and pepper.
- Heat 2 tbsp of the olive oil in a Dutch oven over medium-high heat. Brown the pork in batches until well coloured, 6 to 8 minutes per batch, adding a little more oil if the pan looks dry.
- Lower the heat to medium and add the onion with a pinch of salt. Cook for 8 to 10 minutes, stirring, until softened and lightly golden.
- Add the garlic and cook for 1 minute until fragrant. Stir in the sweet paprika for 30 seconds so it blooms but does not scorch.
- Grate the tomatoes on the coarse side of a grater into a bowl, discarding the skins, then add the pulp to the pot. Return the pork to the pot, add the bay leaves and pour in the chicken stock, scraping up any browned bits.
- Bring to a gentle simmer, then cover and cook on low for 55 minutes, stirring occasionally, until the pork is tender. Remove the lid and simmer for a further 10 to 15 minutes until the sauce is thick and spoonable.
- Taste and adjust seasoning with a little more salt and pepper if needed. Serve hot, with plenty of sauce.

Serving suggestions
This recipe pairs well with:
Tips
- Brown the pork in batches and avoid crowding the pot; good colour at the start gives the sauce a deeper flavour.
- If the sauce thickens before the pork is tender, add a splash of chicken stock and keep simmering gently.
- For vulnerable groups, ensure the pork is cooked until piping hot throughout before serving.
Substitutions
- Replace Pork shoulder with Pork tenderloin for a leaner result; reduce the covered simmering time to about 25 to 30 minutes to avoid drying it out.
- Replace Sweet paprika with Smoked paprika for a smokier sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of chicken stock until piping hot; the sauce will thicken as it stands. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
