Maiale al Latte (Pork Braised in Milk)
Why this recipe works
- Layered savoury flavour: Browning the pork first builds a deep base, while garlic, sage and lemon zest flavour the milk as it reduces.
- Rich pan sauce: Whole milk gently reduces around the pork, creating a creamy, lightly caramelised sauce with soft curds and concentrated flavour.
- Simple, comforting serving: The tender sliced pork and generous sauce work naturally with crusty bread or boiled potatoes.

Timing notes
- Rest before slicing: Let the pork rest after braising so the juices settle and the slices hold together cleanly.
- Finish the sauce just before serving: Reduce the milk juices while the pork rests, stirring often until the sauce is rich and lightly caramelised.
Texture tips
- Keep the simmer gentle: A bare simmer helps the milk reduce without scorching or separating harshly; avoid a rolling boil.
- Use a thermometer for doneness: Cook the pork to 63°C (145°F) for tender, juicy slices, or to 70°C (160°F) when serving anyone who needs extra food-safety caution.
Ingredient notes
- Whole milk matters: Whole milk gives the sauce body and a rounder flavour than lower-fat milk, which can reduce more thinly.
- Use fresh sage if possible: Fresh sage infuses the milk with a softer herbal flavour; rosemary is a stronger alternative if you prefer a more robust finish.
- Choose unwaxed lemon when available: Because the zest goes directly into the sauce, an unwaxed lemon is preferable; avoid grating in the bitter white pith.
Make-ahead tips
- Good for making ahead: The pork can be cooked ahead and refrigerated with its sauce, then reheated gently when needed.
- Reheat gently: Warm in a covered pan over a low heat with a little extra milk if needed, avoiding a boil so the sauce stays smooth.
- Freeze with the sauce: Freeze portions with plenty of sauce to protect the pork from drying out, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Pat the pork dry, then season all over with the fine sea salt. Crush the black peppercorns with a mortar and pestle or the base of a pan, and press them onto the pork.
- Melt the unsalted butter in a Dutch oven over a medium-high heat. Add the pork and brown well on all sides, 8 to 10 minutes in total, then lift it onto a plate.
- Lightly crush the garlic cloves and add them to the pot with the fresh sage. Cook for 30 to 60 seconds until fragrant, keeping the heat moderate so the garlic does not colour too much.
- Finely zest the lemon into the pot, then pour in the whole milk. Bring just to a gentle simmer, stirring to lift any browned bits from the base.
- Return the pork to the pot, cover with a lid slightly ajar, and keep at the barest simmer. Cook for 60 to 70 minutes, turning the pork every 15 to 20 minutes, until very tender and the centre reaches 63°C (145°F).
- Transfer the pork to a board and rest for 10 minutes. Meanwhile, simmer the milk juices uncovered for 5 to 10 minutes, stirring often, until reduced to a rich, lightly caramelised sauce.
- Slice the pork and spoon over the sauce, along with the softened garlic and sage. Serve straight away, with plenty of the pan juices.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the milk at a very gentle simmer; a hard boil can make the sauce split and catch on the base of the pot.
- If the sauce reduces too quickly before the pork is tender, lower the heat and partially cover the pot to slow evaporation.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, cook the pork to 70°C (160°F) and rest for 3 minutes.
Substitutions
- Replace Fresh sage with Fresh rosemary for a more piney, robust flavour.
- Replace Unsalted butter with Olive oil for a slightly lighter finish.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container with the sauce. Reheat gently in a covered pan over a low heat with a splash of whole milk until piping hot; avoid boiling to keep the sauce smooth. Freeze in portions with sauce for up to 2 months and defrost overnight in the fridge before reheating.
