Hühnerfrikassee (German Chicken Fricassee with Rice)
Why this recipe works
- Smooth, creamy sauce: A butter-and-flour roux thickens the poaching stock into a light sauce that coats the chicken without becoming heavy.
- Built-in savoury depth: Poaching the chicken with bay, carrot and leek gives the stock flavour before it becomes the base of the fricassee.
- Fresh finish: Lemon zest and juice brighten the mild sauce and keep the dish neatly balanced.

Texture tips
- Keep the chicken tender: Maintain a low simmer while poaching; a hard boil can tighten the meat and cloud the stock.
- Whisk for a smooth sauce: Add the hot stock to the roux gradually, whisking well between additions to prevent lumps.
- Adjust the consistency: If the sauce thickens too much, loosen it with a little reserved stock until it lightly coats the chicken.
Make-ahead tips
- Good for meal prep: The fricassee keeps well in the fridge and reheats gently, making it suitable for planned lunches or another dinner.
- Reheat gently: Warm it in a saucepan with a splash of stock, stirring often and avoiding a hard boil once hot.
- Freezer-friendly: Cool quickly, freeze in a sealed container, then defrost overnight in the fridge before reheating.
Ingredient notes
- Chicken thighs stay moist: Boneless, skinless thighs are forgiving in the poaching liquid and give a tender result.
- Frozen peas work well: They only need a short simmer at the end, which keeps their colour and gentle sweetness.
- Add lemon to taste: Use the lemon gradually so the sauce tastes bright without becoming sharply acidic.

Instructions
- Rinse the basmati rice until the water runs mostly clear. Cook it in a saucepan with a pinch of the fine sea salt and enough water to cover by about 2 cm, then simmer gently for 10 to 12 minutes until tender. Cover and leave to stand off the heat while you make the fricassee.
- Meanwhile, pour the chicken stock into a large pot and add the bay leaves. Bring to a gentle simmer, add the chicken thighs, and keep at a low simmer for 12 to 15 minutes until the chicken is cooked through and tender. Lift the chicken out to a plate, leaving the stock in the pot.
- Peel and slice the carrot, then trim and wash the leek well and slice it. Add the carrot and leek to the hot stock and simmer for 8 to 10 minutes until just tender. Strain the stock into a bowl, reserving the vegetables, and discard the bay leaves.
- In the same pot, melt the unsalted butter over medium heat. Stir in the plain flour and cook for 2 minutes, stirring constantly, until it smells lightly nutty but has not browned. Gradually whisk in about 750 ml of the reserved stock until smooth and gently simmering.
- Shred or slice the cooked chicken into bite-sized pieces and add it back to the sauce along with the reserved vegetables. Stir in the frozen peas and simmer for 3 to 4 minutes until the peas are hot and the sauce lightly coats the chicken. If the sauce is too thick, loosen with a splash more reserved stock.
- Finely grate a little lemon zest, then squeeze in lemon juice to taste. Season with the remaining fine sea salt and the white pepper, keeping the flavour bright and gently creamy. Serve the hühnerfrikassee over the rice.
Recipe notes
Tips
- Keep the poaching at a gentle simmer rather than a boil so the chicken stays tender and the stock remains clear.
- Whisk the stock into the roux gradually to avoid lumps, and keep the sauce at a gentle simmer so it thickens smoothly.
- If serving vulnerable groups, make sure the chicken is cooked until piping hot throughout with no pink remaining.
Substitutions
- Replace Chicken thighs with Chicken breast boneless skinless for a leaner result; reduce the poaching time by a few minutes so it stays juicy.
- Replace Basmati rice with Jasmine rice for a slightly softer, more fragrant side.
- Replace Lemon with Lime for a sharper citrus finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of chicken stock until piping hot; avoid boiling hard once hot. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
