Palestinian Musakhan (Roasted Chicken with Sumac and Onions)
Why this recipe works
- Layered flavour: Roasted chicken juices, olive oil, sumac, lemon and slow-softened onions build a savoury, tangy base that seasons the bread as well as the meat.
- Contrasting textures: The flatbread becomes soft where it absorbs the onion oil, while the edges crisp lightly and the toasted pine nuts add crunch.
- Classic assembly: Warming the chicken and onions on the bread brings the elements together without overcooking the roast chicken.

Authenticity notes
- Built around bread and onions: Musakhan is closely associated with chicken served over flatbread, with plenty of olive oil, onions and sumac soaking into the base.
- Sumac is central: The sumac is not just a garnish; it gives the onions their recognisable tart, berry-like flavour and deep colour.
Timing notes
- Cook the onions while the chicken roasts: The workflow is most efficient when the onions soften during the chicken’s roasting time, rather than after it comes out of the oven.
- Serve soon after assembling: Once the onions and chicken are on the pita, serve promptly so the bread stays warm with lightly crisp edges.
Texture tips
- Protect the bread texture: Spoon the onion mixture generously but evenly over the pita, then bake only until warmed through so the base absorbs flavour without collapsing.
- For crisper edges: Leave the edges of the pita slightly exposed during the final bake so they can toast while the centre stays rich with onion oil.
Make-ahead tips
- Store separately: Keep the chicken and onions separate from the pita in the fridge, so the bread does not turn soggy.
- Reheat before assembling: Warm the chicken and onions in a 180°C (355°F) oven until piping hot, then assemble with fresh or briefly warmed pita.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Pat the chicken dry, then season all over with the fine sea salt, black pepper, ground cinnamon and 2 tbsp of the sumac. Finely zest the lemon, then squeeze the juice; set both aside.
- Arrange the chicken thighs skin-side up in a roasting pan and roast for 35 to 40 minutes, until the skin is deeply golden and the juices run clear when the thickest part is pierced. If the skin is browning too quickly, lower the oven to 200°C (390°F) for the final 10 minutes. Transfer the chicken to a plate to rest.
- While the chicken roasts, slice the yellow onions. Warm the olive oil in a large frying pan over medium heat, add the onions and cook for 20 to 25 minutes, stirring often, until very soft and sweet. Stir in the remaining 2 tbsp sumac, the lemon zest and lemon juice, and cook for 2 minutes until fragrant and tangy.
- In a dry frying pan over medium heat, toast the pine nuts for 2 to 4 minutes, stirring constantly, until golden. Tip them straight into a bowl so they do not continue to darken in the hot pan.
- Lay the pita bread on a roasting tray and spoon over a generous layer of the sumac onions, letting some of the oil soak in. Nestle the chicken on top and spoon over any resting juices. Bake for 5 to 7 minutes, just until the bread is warmed through and the edges are lightly crisp.
- Scatter over the toasted pine nuts and serve straight away. If you like, finish with an extra pinch of sumac over the top for colour and tang.

Tips
- For the best flavour, give the onions time: keep the heat at medium to medium-low so they soften and sweeten without catching.
- If cooking for anyone vulnerable to food poisoning, make sure the chicken is cooked until piping hot throughout and the juices run clear.
Substitutions
- Replace Chicken thighs with Chicken legs for a slightly richer roast and similar cooking time.
- Replace Pita bread with Naan bread for a softer base that still soaks up the onion oil well.
- Replace Pine nuts with Walnuts for a deeper, toastier crunch.
Storage
- Refrigerate up to 3 days
- Store the chicken and onions separately from the pita bread in airtight containers. Reheat the chicken and onions in a 180°C (355°F) oven until piping hot, then warm fresh pita bread for a few minutes before assembling.
