Cauliflower Cheese Bake
Why this recipe works
- Creamy sauce: A roux-thickened milk sauce gives the Cheddar a smooth base, so it coats the cauliflower rather than turning thin or greasy.
- Tender-crisp contrast: Briefly blanching the cauliflower keeps the florets intact, while the breadcrumb topping adds a crisp finish after baking.
- Classic savoury richness: Sharp Cheddar and Dijon mustard bring depth to the creamy sauce, balancing the mild sweetness of the cauliflower.

Ingredient notes
- Choose a punchy Cheddar: A mature Cheddar gives the sauce a fuller savoury flavour; milder cheese will produce a softer, creamier profile.
- Drain the cauliflower well: Letting steam escape after blanching helps prevent excess water from loosening the sauce in the baking dish.
- Mind softer cheeses: Very soft or mild melting cheeses can make the bake taste flatter, so combine them with a stronger cheese if needed.
Texture tips
- Avoid a watery bake: Do not overboil the cauliflower; it should be just tender and still holding its shape before it goes into the sauce.
- For a crunchier topping: Toast the breadcrumbs briefly before sprinkling them over the bake, especially if using fresh breadcrumbs.
- Keep the sauce smooth: Add the milk gradually and whisk often so the roux absorbs the liquid evenly before the cheese is stirred in off the heat.
Make-ahead tips
- Assemble ahead: The cauliflower and sauce can be assembled in the baking dish in advance; add the breadcrumb topping just before baking for the best texture.
- Reheat gently: Reheat in a 180°C (355°F) oven until piping hot throughout, covering loosely if the top is browning too quickly.
- Freezes well in portions: Cool completely, freeze in portions, then defrost overnight in the fridge before reheating.
Serving ideas
- As a main: Serve with a crisp green salad, peas or steamed greens to balance the richness of the cheese sauce.
- As a side: It sits naturally alongside roast potatoes, greens and a simple gravy-style dinner.
- Fresh finish: A little chopped parsley or chives adds colour and a light oniony note without competing with the Cheddar.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Bring a large pot of well-salted water to the boil.
- Cut the cauliflower into florets. Boil for 4 to 5 minutes until just tender but still holding its shape, then drain well and let the steam escape for a minute.
- Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1 minute, stirring, until it smells biscuity but has not coloured.
- Gradually whisk in the milk until smooth, then cook for 4 to 6 minutes, whisking often, until thick enough to coat the back of a spoon. Take off the heat and whisk in the Dijon mustard, black pepper and 1 tsp of the salt.
- Stir in most of the Cheddar cheese, reserving a small handful for the top, and mix until melted and smooth. Taste and adjust with the remaining salt if needed.
- Tip the cauliflower into a baking dish and pour over the cheese sauce, turning gently to coat. Sprinkle over the breadcrumbs and the reserved Cheddar cheese.
- Bake for 18 to 22 minutes until bubbling around the edges and golden on top. Rest for 5 minutes before serving so the sauce settles slightly.
Recipe notes
Tips
- Drain the cauliflower thoroughly after blanching; excess water can thin the sauce and stop the top from browning well.
- For an extra-crisp topping, toast the breadcrumbs in a dry frying pan for 2 to 3 minutes before sprinkling over the bake.
- If serving vulnerable groups, make sure the bake is piping hot all the way through before serving.
Substitutions
- Replace Dijon mustard with yellow mustard for a milder, more classic flavour.
- Replace Cheddar cheese with gruyere-cheese for a nuttier, more savoury finish.
- Replace breadcrumbs with panko-breadcrumbs for a lighter, crunchier topping.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; cover loosely if the top is browning too quickly. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
