Vegetarian Lentil Chilli Bowl

A lentil chilli bowl gives the familiar comfort of chilli con carne in a vegetarian, everyday form: a thick, tomato-based stew seasoned with cumin and chilli, spooned over rice and finished with fresh toppings. Green lentils bring body and a gently earthy bite, while kidney beans make the bowl more substantial without needing a long cook. The avocado, coriander and lime are more than garnish here; they soften the heat, add freshness and lift the savoury tomato sauce. It is a practical lunch or simple dinner, easy to adjust for spice level and well suited to making ahead, with the fresh toppings added just before serving.

Why this recipe works

  • Spices with depth: Cooking the cumin and chilli powder briefly with the softened onion helps release their aroma before the tomatoes and lentils go in.
  • Fresh finish: Tomatoes and lime brighten the earthy lentils and beans, keeping the bowl from feeling heavy.
  • Good for batch cooking: The lentil chilli stores and freezes well on its own, so the rice and fresh toppings can be added when serving.

Adjust the heat

  • For less heat: Use less hot chilli powder at the start, then adjust at the end once the lentils have softened and the sauce has thickened.
  • For more heat: Add extra chilli powder gradually, tasting as you go so the spice supports rather than overwhelms the lentils and tomato.
  • Keep it rounded: A squeeze of lime and creamy avocado help balance the heat, especially if the chilli powder is particularly punchy.

Ingredient notes

  • Choose green lentils: Dried green lentils hold their shape better than softer red lentils, giving the chilli a more defined texture.
  • Use lime to finish: Add lime after cooking rather than during the simmer so its fresh acidity stays bright.
  • Add toppings last: Keep the avocado, coriander and lime separate until serving to preserve their colour, texture and freshness.

Make-ahead tips

  • Cook the chilli ahead: The lentil chilli can be made in advance and kept chilled, then reheated with a splash of water to loosen the sauce.
  • Freeze the chilli only: Freeze the lentil chilli without the rice, avocado or herbs; fresh toppings give a much better result after reheating.
  • Reheat gently: Warm in a saucepan, stirring occasionally, until piping hot, adding a little water if the lentils have absorbed too much liquid.

Common mistakes

  • Stopping before it thickens: The chilli should be spoonable rather than watery; simmer a little longer if the sauce still looks loose.
  • Letting lentils turn mushy: Check the lentils near the end of cooking so they are tender but still distinct.
  • Storing toppings with the chilli: Avocado and coriander deteriorate quickly once mixed in, so store them separately and add them fresh.

  1. Rinse the lentils in a colander under cold water. Peel and finely chop the onion. Drain and rinse the kidney beans.
  2. Put the rice in a saucepan with cold water and bring to the boil, then reduce to a gentle simmer. Cook for 10 to 12 minutes until tender, then drain well and cover to keep warm. If your rice packet timings differ, follow those.
  3. While the rice cooks, put the onion in a large pot with a splash of water and cook over a medium heat for 4 to 5 minutes until softened. Stir in the cumin and chilli powder and cook for 30 seconds until fragrant. Add the lentils, tomatoes and 500 ml water, then bring to a simmer.
  4. Simmer the chilli for 15 to 18 minutes, stirring occasionally, until the lentils are tender and the sauce is thick. Stir in the kidney beans and simmer for 2 minutes to heat through. If it looks too thick, loosen with a little water; if too thin, simmer a few minutes longer.
  5. Halve the avocado, remove the stone and scoop out the flesh, then slice. Roughly chop the coriander and cut the lime into wedges. Taste the chilli and add a squeeze of lime to brighten it.
  6. Divide the rice between two bowls and spoon the lentil chilli over the top. Finish with avocado and coriander, and serve with the remaining lime wedges for squeezing. Serve straight away while piping hot.

Recipe notes

Tips

  • For a thicker chilli, simmer uncovered for the last few minutes and stir often so it does not catch on the base.
  • If you are sensitive to heat, start with half the hot chili powder, then add more at the end to taste.
  • For best texture, keep the avocado and coriander separate and add them just before serving.

Substitutions

  • Replace Long-grain white rice with brown rice, but allow extra cooking time and a little more water.
  • Replace Hot chili powder with sweet paprika for a milder bowl.

Storage

  • Refrigerate up to 3 days
  • Cool the lentil chilli quickly and refrigerate in a sealed container for up to 3 days. Reheat in a saucepan with a splash of water, stirring, until piping hot; add fresh avocado, coriander and lime after reheating. Freeze the chilli only (not the rice or toppings) for up to 3 months and defrost overnight in the fridge before reheating.
