Porchetta Arrosto (Italian Rolled Pork Roast)

Porchetta arrosto is the Italian rolled pork roast known for its fragrant herb filling, juicy layers of pork and crisp, blistered skin. Skin-on pork belly is seasoned from the inside with garlic, fennel seeds, rosemary and lemon zest, then rolled tightly so the fat bastes the meat as it roasts. The result should slice cleanly, with crackling on the outside and richly seasoned pork at the centre. A little dry white wine in the roasting pan gives simple, savoury juices to spoon over the carved meat, making it well suited to a generous dinner roast or a sharing-style main course.

Why this recipe works

  • Crisp skin: Starting the roast in a very hot oven encourages the skin to blister before the pork finishes cooking more gently.
  • Aromatic filling: Garlic, fennel, rosemary and lemon zest season the meat from the inside, giving each slice a clear savoury-herbal flavour.
  • Classic rolled shape: Rolling the pork keeps the skin on the outside for crackling while protecting the seasoned meat within.

Timing notes

  • Before roasting: Taking the pork out of the fridge before cooking helps it roast more evenly, especially through the centre of the roll.
  • Rest before slicing: Resting gives the juices time to settle, making the porchetta easier to carve cleanly.
  • Best on the day: The crackling is at its crispest soon after roasting, although the meat reheats well for leftovers.

Ingredient notes

  • Choose skin-on pork belly: Skin-on belly is essential here: the fat keeps the roast succulent and the skin forms the crackling.
  • Toast the fennel: Briefly toasting the fennel seeds wakes up their sweet, aniseed flavour before they go into the herb paste.
  • Use lemon for lift: Lemon zest cuts through the richness without adding liquid to the skin, helping the roast taste brighter.

Texture tips

  • For better crackling: Dry the skin thoroughly and keep the wine in the pan rather than splashing it over the pork.
  • For juicy slices: Use a thermometer and cook to the target centre temperature rather than relying only on time.

Make-ahead tips

  • Reheating leftovers: Reheat slices in a 180°C (355°F) oven until piping hot, then briefly finish under a hot grill if the skin needs crisping.
  • Freezing: Freeze cooked portions well wrapped, ideally with a little pan juice to help keep the meat moist when reheated.

  1. Take the pork belly out of the fridge 30 minutes before cooking. Pat it dry, then score the skin in a tight crosshatch, cutting through the skin and fat but not into the meat. Preheat the oven to 240°C (465°F).
  2. Toast the fennel seeds in a dry pan over medium heat for 1 to 2 minutes until fragrant, then crush lightly. Finely chop the rosemary leaves and garlic, then finely zest the lemon. Mix the fennel, rosemary, garlic, lemon zest, half the salt and all the pepper with the olive oil to make a paste.
  3. Turn the pork belly meat-side up and rub the paste all over the meat, pressing it into the surface. Roll the pork up tightly into a log, keeping the skin on the outside. Sprinkle the remaining salt evenly over the skin.
  4. Set the rolled pork seam-side down in a roasting pan. Pour the dry white wine into the pan around the pork, keeping it off the skin. Roast for 25 minutes until the skin starts to blister.
  5. Reduce the oven to 170°C (340°F) and continue roasting for 90 minutes, turning the pan once for even colouring. The porchetta is ready when the centre reaches 70°C (160°F) and the juices run clear. If the skin is not crisp enough, increase the oven to 220°C (430°F) for 8 to 12 minutes, watching closely.
  6. Rest the porchetta for 15 minutes before slicing. Tip the pan and spoon the winey pan juices over the slices as you serve. Finish with a little extra lemon zest if you like.

Recipe notes

Tips

  • For the best crackling, keep the skin as dry as possible: pat it thoroughly dry before salting, and avoid splashing it with the wine in the pan.
  • If the skin is browning too quickly during the lower-temperature roast, loosely cover just the top with foil and remove it for the final crisping.
  • If serving vulnerable groups, cook the pork to at least 75°C (170°F) in the centre for extra safety, then rest as directed.

Substitutions

  • Replace Fresh rosemary with Fresh thyme for a softer, more floral herb note.
  • Replace Dry White Wine with Dry red wine for deeper, richer pan juices.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in a sealed container with the pan juices. Reheat slices in a 180°C (355°F) oven until piping hot; for crisper skin, finish under a hot grill briefly. Freeze well wrapped for up to 2 months and defrost overnight in the fridge before reheating.
