Stilton and Broccoli Soup
Why this recipe works
- Naturally creamy texture: Potato thickens the soup as it blends, giving body without relying only on cream.
- Rounded savoury flavour: Softened onion, vegetable stock, broccoli and Stilton build a rich but balanced base.
- Straightforward method: The soup is simmered until tender, blended smooth, then finished gently with cream and cheese.

Ingredient notes
- Use the broccoli stalk: Peel away any tough outer layer and slice the stalk thinly; it adds flavour and helps reduce waste.
- Choose Stilton to taste: A stronger Stilton gives a more pronounced blue-cheese finish, while a milder piece keeps the soup softer and more rounded.
Texture tips
- For a very smooth finish: Blend thoroughly until the potato and broccoli are fully broken down, then let the soup settle briefly before serving.
- Keep the finish gentle: After adding the cream and Stilton, warm the soup over a low heat only; boiling can make it split.
Make-ahead tips
- Make ahead: The soup can be cooled quickly, covered and refrigerated for up to 3 days.
- Reheat carefully: Warm it gently in a saucepan over a low heat, stirring often and avoiding a boil once the dairy has been added.
Serving ideas
- Serve with bread: Crusty white bread is a classic match for the creamy soup and helps balance the richness of the Stilton.
- Simple finishing touch: A little extra black pepper just before serving sharpens the savoury cheese flavour.

Ingredients
Instructions
- Peel and roughly chop the onion. Peel the potato and cut into small chunks so it cooks quickly. Cut the broccoli into florets and slice the stalk (peel any tough outer layer first).
- Heat the olive oil in a saucepan over a medium heat, then add the onion and cook for 6 to 8 minutes until softened but not browned. Add the potato and stir for 1 minute.
- Add the broccoli and vegetable stock, bring to a gentle simmer, then cook for 12 to 15 minutes until the potato and broccoli are very tender. Take the pan off the heat.
- Blend the soup until completely smooth, then return to a low heat. Stir in the double cream and crumble in the Stilton cheese, warming gently for 2 to 3 minutes until melted; do not let it boil. Season with the black pepper.
- Ladle into bowls and serve straight away with the crusty white bread on the side.

Serving suggestions
This recipe pairs well with:
Tips
- For the smoothest texture, blend for a full minute, then let the soup sit for 2 minutes so any bubbles rise before serving.
- Keep the heat low after adding the double cream and Stilton cheese; boiling can make the soup split and dull the flavour.
Substitutions
- Replace Double cream with cooking cream for a lighter finish.
- Replace Crusty white bread with multigrain bread for a heartier side.
Storage
- Refrigerate up to 3 days
- Cool the soup quickly, cover and refrigerate. Reheat gently in a saucepan over a low heat, stirring often, and do not let it boil once hot.
