Vitello Tonnato Classico (Veal with Tuna and Caper Sauce)
Why this recipe works
- Gentle poaching keeps the veal tender: Cooking the meat at a bare simmer helps it stay delicate and sliceable rather than tight or dry.
- The sauce blends smooth and rich: Tuna, mayonnaise, capers, lemon and olive oil form a creamy sauce that clings neatly to the chilled veal.
- Lemon and capers cut through the richness: Bright acidity and briny capers keep the tuna sauce savoury and fresh rather than heavy.
- Designed to be served cold: Chilling firms the veal for thinner slicing and allows the finished dish to hold well before serving.

Timing notes
- Serve well chilled: Vitello tonnato is at its best cold, after the sauce has had a short time to settle over the sliced veal.
- Chill before slicing: Cold, firm veal is much easier to cut into thin, even slices without tearing.
Texture tips
- Keep the poach gentle: A bare simmer gives the veal a softer texture; vigorous boiling can make the meat tighten.
- Blend the sauce thoroughly: Use warm poaching liquid to help the tuna sauce become smooth, adding more gradually if it needs loosening.
Make-ahead tips
- Store veal and sauce separately: Keeping the components apart helps preserve the texture of the sliced meat and makes the sauce easier to adjust before serving.
- Assemble shortly before serving: Slice the chilled veal, spoon over the sauce, then chill briefly so the flavours settle without the dish becoming heavy.
Authenticity notes
- Piedmontese-style antipasto: Vitello tonnato is closely associated with Piedmont and is typically served cold as an antipasto rather than a hot main course.
- Veal with tuna sauce: The distinctive combination of mild veal and savoury tuna-caper sauce is what defines the dish.

Instructions
- Put the veal in a large pot and add the onion, carrot, celery, bay leaves, peppercorns, water and fine sea salt. Bring to a gentle simmer over medium heat, skimming any foam from the surface. Reduce to low and poach at a bare simmer for 60 to 75 minutes, until the veal is tender and a knife slides in easily.
- Lift the veal out and set it on a tray to cool for 20 minutes. Strain the poaching liquid into a saucepan and keep it warm. Chill the veal until fully cold and firm, at least 45 minutes.
- In a blender, combine the tuna, mayonnaise, capers, the juice of the lemon and the olive oil. Add 60 ml of the warm poaching liquid and blend until very smooth, scraping down as needed. If you want a looser sauce, blend in a little more poaching liquid, 1 tablespoon at a time.
- Slice the chilled veal as thinly as you can and arrange on a serving plate. Spoon the tuna sauce over the veal, leaving some slices peeking through. Chill for 10 minutes to let the flavours settle, then serve cold.
Recipe notes
Tips
- Keep the poaching at a bare simmer; a rolling boil will tighten the veal and make it harder to slice neatly.
- For the cleanest slices, chill the veal until it feels firm to the touch, then slice with a long, sharp knife in smooth strokes.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised mayonnaise and keep the dish well chilled until serving.
Substitutions
- Replace extra virgin olive oil with light olive oil for a milder finish.
- Replace capers with green pitted olives for a softer, less briny sauce.
Storage
- Refrigerate up to 2 days
- Store the veal and sauce separately in airtight containers. Serve straight from the fridge; if the sauce thickens, loosen it with a spoonful of the reserved poaching liquid and stir until smooth.
