Tempe Orek (Sweet and Spicy Stir-Fried Tempeh)

In Indonesian cooking, tempe orek is a quick, flavour-packed way to serve tempeh, turning the firm fermented soya bean cake into golden batons coated in a glossy sweet-savoury glaze. Palm sugar and dark soy sauce give the dish its sticky caramel depth, while shallot, garlic and red chilli bring fragrance and heat. Tamarind keeps the sweetness in check with a gentle sour edge, and lime added at the table brightens the finish. Served hot with steamed jasmine rice, it makes a satisfying vegan dinner with crisp edges, chewy texture and plenty of umami.

Why this recipe works

  • Sweet, savoury depth: Palm sugar and dark soy sauce create a caramel-like glaze with strong umami character.
  • Balanced glaze: Tamarind and lime cut through the sweetness, keeping the sauce bright rather than heavy.
  • Fast cooking: Small batons of tempeh fry quickly, so the dish comes together in under 30 minutes.

Adjust the heat

  • For less heat: Remove the chilli seeds, use less chilli, or choose a milder red chilli pepper.
  • For more heat: Add extra sliced chilli or include a hotter variety if you want a sharper, more assertive finish.

Ingredient notes

  • Tempeh texture: Cutting the tempeh into small batons gives more surface area for browning and helps the glaze cling.
  • Palm sugar balance: Palm sugar gives a rounded caramel sweetness; light brown sugar is a practical substitute with a slightly simpler flavour.
  • Tamarind and lime: Tamarind adds sourness inside the glaze, while lime is best added at the table for a fresher finish.

Common mistakes

  • Do not rush the glaze: Once the sugar and soy sauce are in the pan, keep the heat moderate so the sauce turns glossy instead of burning.
  • Brown the tempeh first: Returning pale tempeh straight to the glaze gives a softer result; frying it until golden adds firmer edges and better flavour.

Make-ahead tips

  • Good for packed meals: The tempeh keeps well in the fridge for up to 3 days and reheats best in a wok or frying pan with a small splash of water.
  • Refresh before serving: Reheat until piping hot and glossy again, then add fresh lime just before serving to bring back brightness.

  1. Rinse the jasmine rice until the water runs mostly clear, then cook it in a saucepan with a pinch of the fine sea salt according to the packet instructions. Keep it covered off the heat while you make the tempeh.
  2. Cut the tempeh into small batons. Thinly slice the shallots, slice the garlic, and finely slice the red chilli pepper (remove the seeds for less heat).
  3. Heat 2 tbsp of the vegetable oil in a wok or large frying pan over medium-high heat. Fry the tempeh for 5 to 7 minutes, turning often, until golden all over, then transfer to a bowl.
  4. Add the remaining 1 tbsp vegetable oil to the pan and reduce the heat to medium. Stir-fry the shallots for 2 minutes until softened, then add the garlic and chilli and cook for 30 to 60 seconds until fragrant.
  5. Add the palm sugar, dark soy sauce and tamarind paste, then stir until the sugar dissolves and the sauce looks glossy. Return the tempeh to the pan and toss for 2 to 3 minutes until everything is sticky and well coated; season with a little more fine sea salt if needed.
  6. Cut the lime into wedges. Serve the tempe orek hot with the steamed rice and squeeze over lime to taste.

Serving suggestions

This recipe pairs well with:

Steamed jasmine rice

Tips

  • Keep the heat at medium once the palm sugar goes in so the glaze turns sticky rather than catching on the pan.
  • For a cleaner, less oily finish, let the fried tempeh sit in the bowl for a minute before returning it to the pan so excess oil drains off.

Substitutions

  • Replace palm sugar with light brown sugar for a similar caramel sweetness.
  • Replace dark soy sauce with light soy sauce for a lighter colour and saltier finish; start with 2 tbsp and adjust to taste.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat in a wok or frying pan over medium heat with a small splash of water, stirring until piping hot and glossy again; add a fresh squeeze of lime just before serving.
