Palak Dal (Spinach and Lentil Curry)
Why this recipe works
- Naturally creamy: Red lentils break down as they simmer, giving the dal body without needing cream or blending.
- Aromatic finish: The hot tarka blooms cumin, garlic and chilli in ghee, adding fragrance and depth right at the end.
- Brightened with lemon: A squeeze of lemon cuts through the richness of the lentils and keeps the spinach tasting fresh.

Adjust the heat
- For gentler heat: Remove the chilli seeds or use less fresh chilli in the base; the cumin tarka will still give warmth and aroma.
- For more heat: Leave the chilli seeds in or add extra fresh chilli to the onion mixture, tasting before serving.
Texture tips
- For a smoother dal: Once the lentils are very soft, whisk the dal briefly in the pot to help it become thicker and creamier.
- Adjust the consistency: Red lentils thicken as they stand, so loosen the dal with a splash of water during cooking or reheating if needed.
Make-ahead tips
- Good for meal prep: The dal keeps well in the fridge for several days and reheats gently on the hob with a little water.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge and reheat until piping hot throughout.
Ingredient notes
- Red lentils cook quickly: Red lentils are ideal here because they soften into a creamy base faster than many whole lentils.
- Swapping the greens: Kale can replace spinach, but it has a firmer texture and may need slightly longer to soften.
- Ghee or oil: Ghee gives the tarka a rich, nutty aroma; olive oil works well if you want a vegan version.

Ingredients
Instructions
- Finely chop the onion. Peel and finely grate the ginger, then thinly slice 2 garlic cloves; finely grate the remaining garlic. Slice the green chilli (remove the seeds for less heat).
- Heat 1 tbsp ghee in a large pot over medium heat. Add the onion and a pinch of the salt, then cook for 8 to 10 minutes until soft and lightly golden.
- Stir in the ginger, the grated garlic, the chilli, turmeric and 1 tsp of the cumin. Cook for 1 minute until fragrant.
- Add the tomatoes, lentils, water and remaining salt, then bring to the boil. Reduce to a gentle simmer and cook for 18 to 22 minutes, stirring occasionally, until the lentils are very soft and creamy; add a splash more water if it thickens too much.
- Stir in the spinach a handful at a time and cook for 2 to 3 minutes until wilted. Keep the dal on a low heat while you make the tarka.
- Heat the remaining 1 tbsp ghee in a small saucepan over medium heat. Add the sliced garlic and remaining 1 tsp cumin, and cook for 60 to 90 seconds until the garlic is pale golden and the spices smell toasted.
- Immediately pour the hot tarka over the dal and stir through. Squeeze in the lemon juice to taste, then simmer for 2 minutes to bring everything together; serve hot.

Serving suggestions
This recipe pairs well with:
Tips
- For a smoother, creamier texture, whisk the dal vigorously for 20 to 30 seconds once the lentils are fully soft.
- Keep the tarka moving and take it off the heat as soon as the garlic turns pale golden, as it can catch quickly.
- If serving vulnerable groups, make sure the dal is simmered until piping hot throughout before serving.
Substitutions
- Replace ghee with olive oil for a fully vegan finish.
- Replace spinach with kale for a slightly earthier, more robust dal.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of water, stirring often, until piping hot; the dal will thicken as it stands. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
