Slow-Cooked BBQ Beef Brisket

Slow-cooked barbecue brisket takes a tough, well-flavoured cut of beef and gives it the time it needs to become tender enough to slice cleanly. Rooted in American barbecue flavours, this version uses the slow cooker for a practical, hands-off approach, with a quick sear for depth and a smoky-sweet rub of paprika, brown sugar, salt and pepper. Onion, garlic, mustard, vinegar, Worcestershire sauce and barbecue sauce create a tangy cooking liquor that keeps the meat moist and gives the finished slices a glossy, savoury coating. It is well suited to relaxed dinners, batch cooking or serving in generous slices with extra sauce spooned over the top.

Why this recipe works

  • Layered barbecue flavour: Searing the brisket first builds savoury depth before the smoky rub and tangy sauce slowly season the meat.
  • Tender, saucy finish: Long, gentle cooking helps the brisket become soft enough to slice while the sauce keeps each serving rich and moist.
  • Excellent made ahead: The brisket can be chilled in its sauce, sliced cleanly once cold, then reheated gently without drying out.

Timing notes

  • Cook until fully tender: Brisket is ready when a knife slides in easily; if it still feels firm, continue cooking rather than relying only on the clock.
  • Rest before slicing: A short rest on the board helps the juices settle, making the brisket easier to slice neatly.

Texture tips

  • Slice against the grain: Cutting across the meat fibres makes each slice feel more tender and easier to eat.
  • Keep it sauced: Store and reheat the brisket in its sauce so the meat stays moist and absorbs extra flavour.

Make-ahead tips

  • Best for clean slices: For neater slices, chill the cooked brisket in its sauce until cold, then slice before reheating.
  • Freeze with sauce: Portion the brisket with plenty of sauce before freezing to help protect the meat from drying out.
  • Reheat gently: Warm in a covered dish at 180°C (355°F) or over a low hob heat until piping hot throughout.

Serving ideas

  • Classic sides: Serve with coleslaw, pickles, potato salad or cornbread to balance the rich, smoky beef.
  • For sandwiches: Pile sliced brisket into soft rolls with extra sauce and something sharp, such as pickles or a vinegar-based slaw.

  1. Thinly slice the onion and peel the garlic. Pat the brisket dry, then mix the smoked paprika, brown sugar, fine sea salt and black pepper in a bowl and rub it all over the meat.
  2. Heat the olive oil in a frying pan over medium-high heat. Sear the brisket for 3 to 4 minutes per side until well browned, then transfer to the slow cooker.
  3. Add the onion and garlic to the slow cooker around the brisket. Whisk together the tomato purée, Dijon mustard, Worcestershire sauce, apple cider vinegar and barbecue sauce, then pour over the brisket.
  4. Cover and cook on low for 8 hours, until the brisket is very tender and a knife slides in easily. Turn the brisket once halfway through if you can, spooning some sauce over the top.
  5. Lift the brisket onto a board and rest for 10 minutes. Slice against the grain and spoon over the sauce from the slow cooker, serving with extra sauce on the side if you like.
