Air Fryer Roast Chicken

Roast chicken made in the air fryer gives the familiar centrepiece dinner a quicker, more compact format while keeping the key qualities intact: crisp, well-seasoned skin and tender meat that rests cleanly before carving. Here the bird is rubbed with olive oil, garlic, lemon zest, sea salt and black pepper, with thyme and lemon tucked inside for gentle fragrance as it cooks. Starting breast-side down helps protect the lean meat before the final turn crisps the top. Serve it as a simple Sunday-style roast, with salads, potatoes or vegetables, then use any leftovers for sandwiches, soups or quick midweek meals.

Why this recipe works

  • Crisp skin: The air fryer’s strong circulating heat helps render the skin efficiently while the oil-based rub encourages even browning.
  • Simple, layered flavour: Lemon zest, garlic and thyme season the chicken from the outside, while the lemon halves and herbs in the cavity add gentle aroma as it cooks.
  • Reliable doneness: Turning the chicken partway through helps it cook evenly, and checking the thigh with a thermometer removes guesswork.

Timing notes

  • Rest before carving: Let the chicken rest for 10 minutes so the juices settle and the meat carves more cleanly.
  • Serve while the skin is crisp: The skin is at its best soon after resting; carve just before serving rather than holding it for too long.

Texture tips

  • Dry the chicken well: Pat the skin thoroughly dry, including around the legs and wings, before adding the oil mixture for the crispest result.
  • Use the breast-down start: Beginning breast-side down helps protect the lean breast meat during the first stage of cooking.

Common mistakes

  • Do not rely on colour alone: Golden skin does not always mean the chicken is cooked through; check for 75°C (165°F) in the thickest part of the thigh.
  • Watch the final browning: If the skin darkens too quickly, reduce the air fryer to 180°C (355°F) for the final stage.

Make-ahead tips

  • Prepare the rub ahead: The garlic, lemon zest, oil, salt and pepper mixture can be prepared in advance and kept chilled until needed.
  • Reheat leftovers gently: Reheat carved chicken in the air fryer at 180°C (355°F) until piping hot, taking care not to dry out the breast meat.

  1. Pat the chicken dry all over with kitchen paper, including inside the cavity. Finely grate or crush the garlic. Zest the lemon, then cut it in half.
  2. Mix the olive oil, garlic, lemon zest, fine sea salt and black pepper. Rub it all over the chicken, including under the skin over the breast where you can. Put the thyme sprigs and squeezed lemon halves into the cavity.
  3. Preheat the air fryer to 190°C (375°F) for 4 minutes. Place the chicken breast-side down in the basket. Air fry for 30 minutes.
  4. Carefully turn the chicken breast-side up using tongs. Air fry for 20 to 25 minutes, or until the skin is crisp and a thermometer reads 75°C (165°F) in the thickest part of the thigh without touching bone. If it browns too quickly, reduce the temperature to 180°C (355°F) for the final 10 minutes.
  5. Lift the chicken onto a board and rest for 10 minutes before carving. Squeeze any juices from the cavity lemon over the carved chicken if you like, then serve.

Recipe notes

Tips

  • For extra-crisp skin, make sure the chicken is thoroughly dry before rubbing with the oil mixture.
  • If you do not have a thermometer, check the thigh juices run clear and the leg wiggles easily, but a thermometer is the most reliable.
  • Food safety: if serving pregnant people, young children, older adults, or anyone immunocompromised, ensure the chicken reaches 75°C (165°F) in the thickest part.

Substitutions

  • Replace Fresh thyme with Fresh rosemary for a more robust, piney herbal note.
  • Replace Lemon with Lime for a sharper citrus flavour.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate carved chicken in an airtight container for up to 3 days. Freeze portions for up to 2 months. Reheat in the air fryer at 180°C (355°F) for 6 to 10 minutes until piping hot, or in a 180°C (355°F) oven for 12 to 18 minutes.
