Chicken and Waffles

Few American comfort dishes bring sweet and savoury together as directly as chicken and waffles. Crisp, seasoned fried chicken sits on warm, tender waffles, with butter and maple syrup turning the plate into something rich, crunchy and lightly sweet without needing a separate sauce. In this version, boneless chicken thighs are soaked in buttermilk for tenderness, coated in peppery seasoned flour and fried until deeply golden, while the waffles stay soft inside with lightly crisp edges. It works as a generous brunch, a relaxed dinner or a sharing-style weekend meal, especially when served straight away while the chicken is hot and the waffles are fresh.

Why this recipe works

  • Crisp, seasoned coating: Buttermilk helps the seasoned flour cling to the chicken, creating a craggy crust that fries up golden and crunchy.
  • Sweet-savoury contrast: Tender fried chicken, soft waffles, butter and maple syrup create the distinctive mix of crisp, fluffy, salty and sweet.
  • Brunch or dinner friendly: The dish works as a generous weekend brunch plate or a relaxed dinner, with the chicken and waffles cooked in manageable batches.

Texture tips

  • Keep the crust crisp: Let excess buttermilk drip off before flouring, then press the seasoned flour firmly onto the chicken for better coating adhesion.
  • Assemble just before serving: Keep the chicken, waffles, butter and syrup separate until the last moment so the waffles stay fluffy and the coating stays crisp.

Common mistakes

  • Do not crowd the pot: Frying too many pieces at once drops the oil temperature, which can make the coating greasy rather than crisp.
  • Check the thickest part: Boneless thighs can vary in thickness, so use a thermometer and cook the chicken to 75°C (165°F).

Make-ahead tips

  • Store separately: Keep leftover chicken and waffles in separate airtight containers so the coating and waffles do not soften each other.
  • Reheat for crispness: Reheat chicken on a baking tray in a 200°C (390°F) oven until piping hot, and warm waffles in a toaster or a 180°C (355°F) oven.

Serving ideas

  • Add something sharp: Pickles, slaw or a vinegary salad cut through the richness of the fried chicken and syrup.
  • Offer extra heat: Hot sauce or chilli honey works well at the table for anyone who wants a spicier finish.

  1. Pat the chicken dry and season all over with 1 tsp of the fine sea salt, 1/2 tsp of the black pepper and the cayenne pepper. In a mixing bowl, whisk 300 ml of the buttermilk with 1 egg, then add the chicken and turn to coat.
  2. In a second bowl, mix 200 g of the plain flour with 1 tsp of the fine sea salt and the remaining 1/2 tsp black pepper. Lift the chicken from the buttermilk, let the excess drip off, then coat well in the seasoned flour, pressing it on.
  3. Pour the sunflower oil into a large pot to a depth of about 5 cm and heat to 175°C (350°F). Fry the chicken in batches for 6 to 8 minutes, turning once, until deep golden and cooked through (75°C/167°F in the thickest part). Transfer to a rack or plate and keep warm while you fry the remaining pieces.
  4. While the chicken fries, make the waffle batter: whisk the remaining 100 ml buttermilk with the remaining egg, then whisk in the remaining 100 g plain flour, baking powder, caster sugar and the remaining 1/2 tsp fine sea salt until smooth. Let the batter stand for 5 minutes to hydrate.
  5. Heat the waffle iron and lightly grease it with a little of the butter. Cook the batter in batches according to your waffle iron, usually 3 to 5 minutes per waffle, until puffed and golden. Keep the waffles warm while you cook the rest.
  6. Serve the hot waffles topped with the fried chicken. Add the remaining butter on top and drizzle with maple syrup to taste.

Recipe notes

Tips

  • For the crispest coating, keep the oil close to 175°C (350°F) and avoid overcrowding the pot, as the temperature will drop and the chicken can turn greasy.
  • If you are serving later, keep the fried chicken warm on a baking tray in a 120°C (250°F) oven while you finish the waffles.
  • If serving young children, reduce the cayenne pepper; for anyone who is pregnant, elderly, or immunocompromised, ensure the chicken is cooked to 75°C (167°F).

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets for a leaner option; reduce frying time and cook to 75°C (167°F).
  • Replace Sunflower oil with Vegetable oil for frying.
  • Replace Maple syrup with Honey for a different sweet finish.

Storage

  • Refrigerate up to 2 days
  • Store the chicken and waffles separately in airtight containers. Reheat chicken on a baking tray in a 200°C (390°F) oven until piping hot and crisp, and warm waffles in a toaster or a 180°C (355°F) oven until hot.
