Air Fryer Apple Turnovers
Why this recipe works
- Crisp pastry: Air frying surrounds the puff pastry with strong circulating heat, helping it puff and brown evenly.
- Balanced filling: Lemon juice and zest keep the sweet apple filling bright, while cinnamon and vanilla add warmth.
- Simple assembly: Ready-rolled-style puff pastry, a cooked filling, and a fork-crimped seal make the turnovers approachable and reliable.

Timing notes
- Cool the filling first: Let the apple mixture cool before filling the pastry so the butter in the pastry stays firm enough to puff.
- Rest before serving: A short rest after air frying helps the syrupy filling settle, making the turnovers easier to eat warm.
Ingredient notes
- Choose firm apples: Firm, crisp apples hold their shape better during the brief cook and give the filling a better texture.
- Use all-butter pastry if possible: All-butter puff pastry gives a richer flavour and a more delicate, flaky finish.
Texture tips
- Cook the filling until syrupy: Reducing the apple juices before assembling helps stop excess liquid leaking into the pastry.
- Keep the pastry cool: If the pastry softens or feels sticky, chill the assembled turnovers briefly before air frying so they keep their shape.
Make-ahead tips
- Re-crisp in the air fryer: Reheat chilled turnovers at 180°C (355°F) until crisp and piping hot.
- Freeze baked turnovers: Cool completely, freeze after baking, then thaw in the fridge overnight before reheating.

Ingredients
Instructions
- Peel, core and cut the apples into small dice. Put them in a saucepan with the butter, caster sugar, cinnamon, finely grated lemon zest, 1 tbsp lemon juice and the vanilla. Cook over a medium heat for 6 to 8 minutes until the apples are just tender and the juices are syrupy.
- Scrape the apple filling into a bowl and cool for 10 minutes so it does not melt the pastry. Meanwhile, take the puff pastry from the fridge and let it sit at room temperature for 3 to 5 minutes until pliable.
- Lightly flour the work surface and roll the puff pastry to a neat rectangle, about 3 mm thick. Cut into 4 equal squares. Spoon the cooled apple filling onto one half of each square, leaving a 1.5 cm border.
- Beat the egg in a small bowl. Brush a little egg around the pastry borders, fold each square into a triangle and press the edges to seal, then crimp with a fork. Brush the tops with more egg for a glossy finish.
- Preheat the air fryer to 190°C (375°F) for 3 minutes. Air fry the turnovers in a single layer for 10 to 12 minutes until puffed, crisp and deep golden; cook in batches if needed. Rest for 5 minutes before serving warm so the filling can settle.
Recipe notes
Tips
- Keep the apple pieces small and cook them until the juices look syrupy; this helps prevent leaks and soggy pastry.
- If the pastry feels sticky at any point, chill the assembled turnovers for 5 minutes before air frying so they hold their shape.
- Egg wash contains raw egg; if serving to vulnerable groups, use pasteurised egg if available.
Substitutions
- Replace Ground cinnamon with Chinese five spice powder for a warmer, spiced profile.
- Replace Caster sugar with Light brown sugar for a deeper, caramel-like sweetness.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in an airtight container for up to 2 days. Reheat in the air fryer at 180°C (355°F) for 3 to 5 minutes until crisp and piping hot. Freeze baked turnovers for up to 2 months; thaw in the fridge overnight and reheat as above.
