Air Fryer Stuffed Peppers
Why this recipe works
- Savoury base: Softened onion, garlic, smoked paprika and tomato give the pork and rice filling depth without needing a long simmer.
- Hearty but balanced: Rice and minced pork make the peppers substantial, while the sweet pepper shell and fresh parsley keep the dish from feeling heavy.
- Melted cheese finish: Mozzarella melts over the filling in the air fryer, adding a soft, creamy topping with light browning.

Timing notes
- Prepare before filling: Have the rice cooked, vegetables chopped and cheese grated before starting the pork mixture; the final assembly moves quickly.
- Rest briefly before serving: A short rest helps the filling settle inside the peppers, making them easier to serve neatly.
Texture tips
- Keep the filling moist, not wet: Drain the rice well and cook the tomato just until softened so the stuffing holds together inside the pepper.
- Avoid drying out the pork: Cook the mince only until no longer pink in the pan, as it will finish heating through in the air fryer.
Make-ahead tips
- Make the filling ahead: The pork, rice and tomato filling can be cooked in advance, cooled and refrigerated before stuffing the peppers.
- Fill before cooking: For the best texture, stuff and top the peppers shortly before air-frying rather than leaving them assembled for too long.
- Reheat gently: Reheat chilled stuffed peppers in the air fryer at 180°C (355°F) until piping hot, covering loosely with foil if the cheese browns too quickly.
Ingredient swaps
- Change the mince: Minced turkey or beef can be used instead of pork, with seasoning adjusted to taste.
- Adjust the cheese: Use cheddar instead of mozzarella for a sharper, more robust topping.
- Soften the smokiness: Swap smoked paprika for sweet paprika if you want a milder, less smoky flavour.

Ingredients
Instructions
- Cook the long-grain white rice in salted boiling water until tender, then drain well and set aside. Meanwhile, slice the tops off the red peppers and remove the seeds and membranes. Finely chop the yellow onion, crush the garlic, dice the tomato, and coarsely grate the mozzarella; roughly chop the fresh parsley.
- Heat the olive oil in a frying pan over medium heat. Cook the onion with a pinch of the fine sea salt for 6 to 8 minutes until softened and lightly golden, then stir in the garlic for 30 seconds. Add the minced pork and smoked paprika and cook for 5 to 7 minutes, breaking it up, until no longer pink.
- Stir the tomato into the pork mixture and cook for 2 to 3 minutes to soften slightly. Take off the heat, then fold in the cooked rice and half the parsley; season with the remaining fine sea salt to taste. The filling should look moist but not wet.
- Fill the peppers generously, pressing the filling down lightly, then top each with the grated mozzarella. Preheat the air fryer to 190°C (375°F) for 3 minutes. Air-fry the peppers for 12 to 15 minutes until the peppers are tender and the cheese is melted and lightly golden.
- Rest for 2 minutes, then scatter with the remaining parsley. Serve hot.
Recipe notes
Tips
- Choose peppers that can stand upright in the basket; if they wobble, trim a very thin slice from the base to level them.
- For a moister filling, avoid overcooking the pork in the pan; it will finish cooking in the air fryer.
- Food safety: minced pork should be cooked until piping hot throughout; if unsure, air-fry for a few minutes longer until the centre is steaming.
Substitutions
- Replace mozzarella with cheddar cheese for a sharper, more robust topping.
- Replace smoked paprika with sweet paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container. Reheat in the air fryer at 180°C (355°F) for 6 to 8 minutes until piping hot; cover loosely with foil if the cheese is browning too quickly.
