Chinese Chicken Stir Fry
Why this recipe works
- Fast, high-heat cooking: The chicken and vegetables are cut small so they cook quickly in the wok without losing freshness.
- Light coating, glossy sauce: Cornflour helps the chicken brown lightly and gives the sauce enough body to cling without becoming heavy.
- Balanced savoury depth: Soy sauce, oyster sauce, garlic, ginger and sesame oil create a rounded umami base that suits both the chicken and vegetables.

Common mistakes
- Avoid crowding the wok: Keep the chicken in a single layer at the start so it browns quickly rather than steaming.
- Use high heat: A properly hot wok helps the vegetables stay bright and crisp while the sauce reduces to a glossy coating.
- Prep before cooking: Slice the chicken, vegetables, aromatics and spring onion before heating the wok, as the cooking stage moves quickly.
Texture tips
- Keep the chicken tender: Chicken thighs are forgiving in a hot wok, but they should still be cooked only until opaque and just cooked through.
- Keep the broccoli crisp: Add only a small splash of water to help the broccoli steam briefly, then keep tossing so it stays tender-crisp.
- Loosen the sauce if needed: If the sauce thickens too much, add a splash of water and toss until it turns glossy again.
Ingredient notes
- Chicken thighs work well: Boneless, skinless thighs stay juicy during high-heat stir-frying and suit the savoury sauce.
- Use toasted sesame oil as a finishing flavour: Toasted sesame oil brings a deeper nutty aroma than plain sesame oil, so it is best used in the sauce rather than as the main frying oil.
- Cut vegetables evenly: Small broccoli florets and thin slices of pepper cook at a similar pace, helping the stir-fry finish evenly.

Instructions
- Rinse the jasmine rice briefly, then add it to a saucepan with the water. Bring to the boil, cover, then cook on the lowest heat for 10 minutes. Remove from the heat and leave covered for 5 minutes, then fluff with a fork.
- Meanwhile, slice the chicken into bite-sized pieces and toss with the cornflour until lightly coated. Stir together the soy sauce, oyster sauce and toasted sesame oil in a small bowl. Finely slice the garlic and ginger, cut the broccoli into small florets, slice the red pepper, and slice the spring onion (keep a little of the green part for finishing).
- Heat a wok over high heat until very hot, then add the sunflower oil. Add the chicken in a single layer and stir-fry for 3 to 4 minutes until lightly golden and nearly cooked through. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
- Add the broccoli and red pepper and stir-fry for 2 minutes. Add 30 ml water, then stir-fry for 1 to 2 minutes until the broccoli turns bright green and is tender-crisp. Pour in the sauce mixture and add most of the spring onion; toss for 1 minute until glossy and the chicken is cooked through.
- Serve straight away over the steamed jasmine rice. Scatter over the reserved spring onion greens.
Recipe notes
Tips
- Keep everything prepped before you start cooking, as the stir-fry moves quickly once the wok is hot.
- If the sauce looks too thick, loosen it with a splash of water and toss for 20 to 30 seconds until glossy.
- Make sure the chicken is cooked through before serving; it should be opaque all the way through with no pink juices.
Substitutions
- Replace Chicken thighs with Chicken breast boneless skinless for a leaner stir-fry; reduce the initial fry time by about 1 minute to avoid drying out.
- Replace Sunflower oil with Vegetable oil for similar high-heat cooking performance.
- Replace Toasted sesame oil with Sesame oil for a milder sesame finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a hot wok or frying pan with a splash of water until piping hot; the broccoli will soften slightly on reheating.
