Modern Taco Bowl
Why this recipe works
- Layered flavour: Lime-zested rice, taco-spiced beef, beans, salsa and sour cream each bring a different savoury, tangy or creamy note.
- Warm and crisp contrast: Hot beef and rice are balanced by shredded romaine and fresh salsa, keeping the bowl lively rather than soft throughout.
- Easy to prep in parts: The rice and beef-bean mixture can be stored separately from the cold toppings, making it simple to reheat and assemble later.

Adjust the heat
- For a milder bowl: Use a mild taco seasoning and choose a mild salsa; the sour cream will also soften the spice at serving.
- For more heat: Choose a hotter salsa or add chilli flakes, sliced jalapeños or hot sauce when serving so each bowl can be adjusted individually.
- Keep it balanced: Extra lime and a cool creamy topping help keep the spice fresh and rounded rather than harsh.
Make-ahead tips
- Store the components separately: Keep the rice and beef-bean mixture in separate containers, with the lettuce, salsa and sour cream stored cold until serving.
- Reheat before assembling: Warm the rice and beef mixture until piping hot, adding a small splash of water if needed to loosen the grains and meat.
- Assemble at the last minute: Add the lettuce, salsa, sour cream, coriander and lime just before eating so the toppings stay crisp and fresh.
Ingredient swaps
- Change the protein: Minced turkey or chicken can replace beef for a lighter bowl while still working well with taco seasoning.
- Make it vegetarian: Skip the beef and use extra black beans, sweetcorn and sautéed vegetables for a hearty meat-free version.
- Adjust the topping: Greek yoghurt can stand in for sour cream, while a chunkier salsa adds more texture.
Common mistakes
- Wet toppings can make the rice heavy: Drain the beans and sweetcorn well before adding them to the pan so the bowl stays fluffy rather than watery.
- Give the beef room to brown: Let the mince cook until its liquid evaporates; this gives better savoury flavour and prevents a steamed texture.
- Do not add lettuce too early: Add the romaine after the hot components are in the bowl so it keeps its crunch.

Ingredients
Instructions
- Cook the rice in salted boiling water until tender, 10–12 minutes. Drain well, then return to the pan off the heat.
- Finely chop the fresh coriander. Zest the lime, then cut it into wedges.
- Stir the lime zest, half the coriander and a squeeze of lime into the hot rice. Cover and keep warm while you cook the beef.
- Heat the olive oil in a large frying pan over a medium-high heat. Add the minced beef and cook for 6–8 minutes, breaking it up, until browned and any liquid has evaporated.
- Stir in the taco seasoning and black pepper, then add a splash of water to help it coat the meat. Cook for 1–2 minutes until fragrant and glossy.
- Rinse and drain the black beans and drain the sweetcorn. Add both to the pan and cook for 3–4 minutes until warmed through; taste and add a pinch more salt if needed.
- Shred the romaine lettuce. Divide the coriander lime rice between two bowls, then spoon over the beef, beans and sweetcorn.
- Top each bowl with the lettuce, salsa and a dollop of sour cream. Finish with the remaining coriander and serve with extra lime wedges for squeezing over.

- Replace sour cream with greek-yogurt for a lighter topping.
Storage
- Refrigerate up to 3 days
- Store the rice and beef-bean mixture in separate airtight containers; keep the lettuce, salsa and sour cream separate. Reheat the rice and beef mixture in the microwave or in a frying pan with a splash of water until piping hot, then assemble with the cold toppings.
